Cheddar, monterey jack and cream cheese are melted until perfectly gooey in between two pieces of golden brown garlic butter bread. Each bite you crunch through the salty, buttery bread into a sea of decadently melted cheese. It’s the Ultimate Grilled Cheese!

Ultimate Grilled Cheese Sandwich

The Ultimate Grilled Cheese Sandwich is a cheese-lover’s dream come true. Cheddar, monterey jack and cream cheese are melted until perfectly gooey in between two pieces of golden brown garlic butter bread. Each bite you crunch through the salty, buttery bread into a sea of decadently melted cheese. It’s the Ultimate Grilled Cheese!

First, let’s talk about the bread, because it is the vessel that holds this baby together! I like using a country Italian or sourdough bread for this. Don’t tell anyone, but I always grab the two largest slices from the middle of the loaf for my grilled cheese. Finders keepers. I like a hearty bread that is going to crisp up nicely and not fall apart from the butter and cheese. You can usually find these types of bread boules in the bakery section of your grocery store. Each slice gets a generous brushing of garlic butter before you move onto the goods: CHEESE. 

Up next, ALL the cheese! Using several different kinds of cheese helps give the ultimate cheesy factor. I like to use a mild or sharp cheddar for that classic taste, a mild white cheese (such as monterey jack) for a good melting factor and my secret… CREAM CHEESE. Oh yeah, we’re going there. Talk about creaminess! For the cream cheese, you can either use a standard block of cream cheese that has been softened, or even a plain cream cheese spread that you would put on your bagel. I like the whipped kind. You can always mix up your cheese choices depending on what you have on hand. If you want to really indulge and splurge a little bit, Port Salut is your white cheese to choose. SO good, but the price tag is usually a bit more. If you don’t have monterey jack, you could also use mozzarella!

Finally, it wouldn’t be a grilled cheese sandwich without some tomato soup to dunk it in! My go-to is always my Epic Tomato Soup Sauce. You can have this simmering away while you assemble and make your Ultimate Grilled Cheese Sandwich. By the time the grilled cheese are done, your soup will be ready for dunking!

Ingredients

Scale
  • 4 slices country Italian or sourdough bread
  • 4 oz butter, softened
  • 1/2 teaspoon garlic salt
  • 4 oz mild cheddar cheese, thinly sliced
  • 4 oz monterey jack cheese, thinly sliced
  • 4 oz cream cheese, softened or whipped

Instructions

  1. In a small bowl, mix together the butter and garlic salt until smooth. Evenly spread it on all four slices of bread on all sides. Starting with the bottom two slices of your sandwiches, spread the softened or whipped cream cheese on the inside of the bottom slices. Then, evenly layer and distribute the cheddar and monterey jack on top of the cream cheese. Top the sandwiches with the top slice of bread.
  2. Heat a large skillet over medium heat. Place the prepared grilled cheese sandwiches into the skillet and cover with a lid for a couple minutes. Remove the lid after a couple minutes and check the undersides of the sandwiches to make sure they are golden brown before flipping. If they are not golden brown yet, let them cook for a few minutes more, or until golden brown.
  3. Flip the sandwiches after the first side is golden brown. Gently press the sandwiches down with your spatula after you flip them to smoosh all the cheeses together. Cook until the second side is golden brown and all the cheese is melted, about a few minutes more. If your bread is browning before all your cheese is melted, you can flip it again to prevent the bread from getting too dark. Enjoy!
