Ingredients Needed

One of the main things I love about this soup is how vibrant and flavorful it is. Part of that is played by all the wonderful, fresh vegetables added to this soup! Here’s a breakdown of what’s needed:

  • Boneless, skinless chicken breasts or thighs – light or dark chicken meat can be used for this recipe. Choose your favorite! 
  • Olive oil – I always keep extra virgin olive oil on hand for the majority of my cooking purposes. Any light oil can be used here. 
  • Onion – white onions are my go-to for cooking and sautéing. 
  • Red bell pepper – not only does the red bell pepper add flavor, but a wonderful pop of red color!
  • Garlic – I always keep this chopped garlic on hand for an easy grab-and-go option. 
  • Red curry paste – this is where the curry heat and flavor comes from! I love that it’s not a sharp, overwhelming heat.
  • Cayenne – cayenne pepper adds a punch of heat. If you are sensitive to a little bit of heat, this ingredient can be eliminated. 
  • Salt – a universal ingredient to always have on hand!
  • Coconut milk – grab the unsweetened, full-fat version. 
  • Chicken stock – the ingredient that makes this soup, well, soupy!
  • Mushrooms – baby bella mushrooms or standard white mushrooms can be used for this recipe. 
  • Cilantro – fresh cilantro brings this soup to life! It adds a wonderful, bright flavor. Plus, a vibrant, green color!
  • Green onions – another great ingredient that easily adds flavor and color to this recipe. 

Now, I know this may seem like a long ingredient list, but all of the fresh ingredients really is what brings this soup to life and takes it to the next level. Trust me on this one, your tastebuds will be thanking you!

  • Comforting – last but not least, this soup is incredibly comforting. It will warm you from the inside out.

Ingredients

  • 2 pounds boneless, skinless chicken breasts or thighs, cut into 1-inch pieces
  • 2 tablespoons extra virgin olive oil
  • 1 onion, diced
  • 1 red bell pepper, diced
  • 1 tablespoon garlic, chopped
  • 2 tablespoons red curry paste
  • 1/4 teaspoon cayenne
  • 1 teaspoon salt
  • 13.5 oz unsweetened coconut milk
  • 64 oz chicken stock
  • 8 oz mushrooms, sliced
  • 1/4 cup cilantro, chopped
  • 2 green onions, chopped

Instructions

  1. Heat the olive oil over medium heat in a soup pot or Dutch oven. Sear the chicken on all sides until golden brown. Transfer the chicken to a plate for later use.
  2. Add in the onion, red bell pepper and garlic and sauté for a couple minutes. Add in the red curry paste, cayenne and salt and stir to combine.
  3. Stir in the coconut milk. Pour in the chicken stock and bring to a low boil over medium-high heat. Add the chicken back into the soup and reduce the heat to low. Add in the mushrooms.
  4. Allow the soup to simmer on low heat for 25-30 minutes, or until the soup has reduced slightly and the chicken is tender. Stir in the cilantro and green onion. Serve the soup over a scoop of white rice for the ultimate bowl of soup and enjoy!
