I love how this soup is loaded with flavor and goodies. And guess what? It’s good for you too! Make this for an easy weeknight dinner, when you’re feeling the sniffles come on, or just when you need a hearty meal. Top it off with a dollop of sour cream, grab a bag of chips and dig in! And cheese… you always need cheese.

Simmer this soup away on the stove top, or brown the hamburger and then dump all of the ingredients into a slow cooker and let it do it’s own thing. Isn’t soup season just the best? You can clean out your refrigerator or cupboard and usually come up with a delicious concoction. This Sweet Potato Taco Soup is also perfect for meal planning! A batch can last a couple days for two people, or double it if you need to feed multiple people over a few days!

Sweet Potatoes

One of my favorite things about this soup is the sweet potatoes! It may seem odd pairing sweet potatoes with taco soup, but it is SO good! Naturally sweet, the sweet potatoes compliment the spiciness of the taco seasoning. Much like how corn has a natural sweetness to it. 

Not only do the sweet potatoes add a natural sweetness, but a fun pop of orange color and a bit of starchiness to the soup. Makes the texture wonderful! 

Use either a medium or medium/large sweet potato, or a couple smaller sweet potatoes. Peel and dice into 1/2 inch cubes. 

How to Make

The directions for this recipe are for a stovetop use, which is my recommended way of cooking it. But, there are other options too! Here’s the stovetop version:

Start off by browning the hamburger and onion together in a large pot or Dutch oven.

Sprinkle in the spices and stir until aromatic. It smells wonderful!

Pour in the diced tomatoes, green chiles and black bean.s

Add in the diced sweet potatoes and chicken stock.

Simmer until the sweet potato is fork tender and the soup is all sorts of delicious!

 

Slow Cooker

Brown the hamburger and onion together on the stovetop and add in the seasonings.

Transfer to the bottom of a slow cooker, add in the rest of the ingredients and cook on high for 4-6 hours or low for 6-8 hours.

 

Either way you make it, this soup is delicious and heart-warming!

Ingredients

Scale
  • 1 pound ground beef
  • 1 small onion, diced
  • 1 tablespoon garlic, chopped
  • 2 teaspoons chili powder
  • 1 teaspoon cumin
  • 1 teaspoon salt
  • 1/4 teaspoon pepper
  • 14.5 oz can diced tomatoes
  • 7 oz can diced green chiles
  • 15 oz can black beans, drained and rinsed
  • 1 medium sweet potato, peeled and diced into 1/2 inch cubes
  • (2) 32 oz containers chicken stock

Instructions

  1. In a large pot or Dutch oven over medium heat, brown the ground beef and loosely break apart. Add in the onion and garlic and sauté for a few minutes more until translucent.
  2. Add in the chili powder, cumin, salt and pepper. Stir to combine.
  3. Pour in the diced tomatoes, green chiles, black beans, sweet potatoes and chicken stock and gently stir to combine.
  4. Bring to a low boil and then allow to simmer for about 20-25 minutes, or until the sweet potatoes are fork-tender and cooked through.
  5. Serve with desired toppings and enjoy!

Notes

  • If making in a slow cooker, brown the ground beef, onion and garlic together in a skillet and then transfer to a slow cooker. Add in the remaining ingredients, stir to combine, cover with a lid and allow to cook on high for 4-6 hours or low for 6-8 hours.
