Let’s Talk Summer Produce
Come this time of year, Summer produce is in full swing! From corn, to tomatoes, to basil, this recipe features them all! The best part about using summer-fresh produce is the flavor. Loaded full of sweetness, fresh corn is sliced off the cob and tossed in to sauté. Juicy tomatoes burst and make a decadent sauce. And then vibrant, fresh basil brings it all together.
Granted, if it’s not summertime and you still want to make this recipe, go for it! These days we can get fresh, seasonal produce all-year round. But, trust me, you’ve gotta try it when it’s summertime fresh!
Corn tip: have you seen or heard of the bundt pan trick for cutting the corn off the cob? Simply husk the corn, place it into the center ring of the bundt pan to stabilize it and then cut all the kernels into the pan! Easy and mess-free.
Onto the Gnocchi
Gnocchi is a true showcase that potatoes really can be anything they want to be haha! Did you know that gnocchi is made out of mashed potatoes? That’s right! Homemade gnocchi can be made, or you can buy pre-made gnocchi in your grocery store.
For me, I went with the pre-made gnocchi to save on work and time. I was able to find it at my local Trader Joe’s in the pasta aisle. There are a lot of frozen versions, but for this recipe, I recommend going with a dried version. It will help the gnocchi maintain their texture and bite. After a quick boil, the gnocchi is drained and then tossed into scrumptious, buttery, white wine sauce with the tomatoes and corn. The sauce perfectly forms around the gnocchi!

All in all, this gnocchi dish blew my expectations out of the water. Salty pancetta, sweet corn, juicy tomatoes, vibrant basil and comforting gnocchi all come together for a dreamy recipe. We couldn’t stop eating it!
A great recipe for a quick weeknight meal, summer date night with some white wine or a way to use up some of your summer produce.

Ingredients
- 4 oz pancetta, cubed/chopped
- 4 tablespoons butter
- 16 oz roma or grape tomatoes, halved
- 1 tablespoon chopped garlic
- 1/2 teaspoon salt
- 1/2 cup dry white wine
- 2 ears fresh sweet corn, cut off the cob
- 1 pound gnocchi (not frozen preferably)
- 1/4 cup fresh basil, chopped
Instructions
- Add the pancetta to a large sauté pan over medium heat and sauté until slightly browned, about a few minutes. Remove the pancetta from the pan to a side plate for later use. Add the butter into the pan and allow to melt.
- Carefully add in the halved tomatoes, garlic and salt. Allow to sauté for about 5 minutes, or until the tomatoes are starting to cook down and caramelize a bit. Deglaze the pan with the white wine and reduce the heat to low. Add in the fresh corn kernels. Simmer on low for another 5 minutes.
- Meanwhile, bring a large pot of water to a boil and cook the gnocchi according to package instructions. Drain and add into the sauté pan along with the pancetta and basil. Gently toss to coat and combine all the ingredients together. Garnish with additional basil or parmesan cheese as desired. Enjoy!

- This recipe shines with summer-fresh produce, but can be made any time of the year!
- Try to find gnocchi in the dried pasta aisle vs. the frozen aisle for this recipe.
