What is a Snickerdoodle?
Snickerdoodle cookies are well-known for their classic cinnamon taste, but what exactly is a Snickerdoodle cookie? Essentially, a sugar cookie base loaded full of cinnamon! One of the main things that sets Snickerdoodle cookies apart from others is a slight tang to them – that comes from the cream of tartar! I know, it’s a weird ingredient. But, it helps as a leavening agent in the cookies and gives it the tang that they are known for. It’s almost like a buttermilk taste to me.


Cinnamon-Sugar Coating
After the cookie dough is made, it’s time for the cinnamon-sugar coating! This is another vital part to what makes a Snickerdoodle a Snickerdoodle. As the cookie bakes, it develops all these wonderful cracks in the cinnamon-sugar coating that give the cookies their classic marbled look.
Use a medium-sized cookie scoop to scoop the dough into balls. Roll each cookie dough ball into the cinnamon sugar and place on a baking sheet. Easy peasy! Now, they are ready for the oven!

If I’m being honest, a Snickerdoodle cookie is typically one that I skip over. They just have never been at the top of my favorite’s list! But, these are a game-changer. Here’s what I love about this recipe:

Ingredients
For the cookies:
- 2 sticks (16 tablespoons) butter, softened
- 1 1/2 cups sugar
- 1 large egg
- 2 1/4 cups flour
- 1 teaspoon cream of tartar
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1/2 teaspoon cinnamon
For the coating:
- 1/3 cup sugar
- 1 teaspoon cinnamon
Instructions
For the cookies:
- Preheat your oven to 350 degrees. In the bowl of an electric mixer, cream together the butter and sugar on medium speed until light and fluffy, about a couple minutes. Reduce the speed to low and mix in the egg, making sure the bottom of the bowl is mixed in.
- Add in the flour, cream of tartar, baking soda, cinnamon and salt and mix just until a cookie dough forms.
For the coating:
- Combine the sugar and cinnamon together in a small bowl.
- Use a medium-sized cookie scoop to scoop the dough into balls, roll into the cinnamon-sugar to coat completely and place on a baking sheet a few inches apart.
- Bake for 10-12 minutes, or until the cookies are set and just starting to turn slightly golden brown. Allow to cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely. Enjoy!
