Description

Chicken is slow-cooked in green chiles, tomato sauce, garlic, and spices until fall-apart tender and infused with southwestern flavor. The serving options are endless, from tacos to nachos to enchiladas.

Make this slow cooker Mexican shredded chicken for an easy weeknight dinner. You can also meal prep Mexican chicken for the week or freeze it for later. 

Or, host a fun dinner party where the guests can build their own meal: rice bowls, tacos, burritos—you name it. It’s an easy way for everyone to pick their favorite option and customize their toppings!


Ingredients

  • 3 pounds boneless, skinless chicken breasts or tenderloins 
  • 1 cup tomato sauce
  • 1 tablespoon chili powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon cumin
  • 1 teaspoon salt
  • 1/4 teaspoon pepper
  • 4 oz diced green chiles
  • 1 tablespoon garlic, chopped

Instructions

  1. Add all of the ingredients together in a 6-quart slow cooker.
  2. Cover and cook on high for 4-6 hours or low for 6-8 hours.
  3. Shred the chicken and toss together with the sauce in the bottom of the slow cooker. Serve as desired and enjoy!

Notes

  • If dark meat is preferred, boneless, skinless chicken thighs can be used.
