What Kind of Chicken to Use

Boneless, skinless chicken thighs are the perfect option for this recipe because they stay nice and tender all while being loaded full of flavor. 

Naturally more flavorful than white chicken meat because of the higher fat content, the chicken thighs give the sauce an extra depth of flavor that you can’t miss. 

Cooked together in the slow cooker with diced onion, carrot, celery, warm herbs and bone broth, the chicken becomes fall-apart tender. Which is perfect! Use a couple forks to shred the chicken into the soup and you are set to go.

Boneless, skinless chicken breasts or tenders are also a great option because they cook quickly, shred easily and are classically delicious!

Either option you choose (light or dark meat), it is a scrumptious outcome!

Chicken Bone Broth vs. Chicken Stock

You may be asking yourself, what’s the difference between chicken bone broth and stock and why does it matter? Well, let’s dive into it!

First off, the main difference between the two is the cooking time. Often, chicken stock is simmered for a few hours, whereas bone broth is simmered for many hours. Talk about dedication when making bone broth!

Then comes the nutritional qualities. They are both essentially made with the same ingredients, but since bone broth is cooked so much longer, it has a much more dense, nutritional-packed outcome. Which makes it perfect for sipping on it’s own or using in recipes!

Next is the color difference. Due to the cook time differences, chicken stock is going to be a lighter color than the chicken bone broth.

Ingredients

Scale
  • 1 1/2 pounds Smart Chicken Boneless, Skinless Chicken Tenders or Breasts
  • 1 onion, diced
  • 2 celery stalks, diced
  • 1 cup chopped carrot (baby carrots work perfect for this)
  • 1 cup wild rice blend
  • 1 bay leaf
  • 1 teaspoon dried thyme
  • 1/2 teaspoon dried rosemary
  • 1/2 teaspoon dried oregano
  • 1 tablespoon chopped garlic
  • 1 teaspoon salt
  • (3) 16.9 oz Smart Chicken Organic Classic Chicken Bone Broth
  • 1 cup heavy cream
  • 1 cup shredded Parmesan cheese

Instructions

  1. Add the chicken, onion, celery, carrot and wild rice into the bottom of a slow cooker. Add in the bay leaf, thyme, rosemary, oregano, garlic and salt.
  2. Pour in the bone broth and gently stir to combine all the ingredients. Cover and cook on high for 4 hours.
  3. Remove the chicken from the soup and shred with a couple forks. Add the shredded chicken back into the soup, pour in the heavy cream and Parmesan cheese and stir to combine and melt the cheese. Season to taste if needed and enjoy!

Notes

  • Stovetop instructions: Add all of the ingredients except for the heavy cream and cheese to a large pot. Simmer on low heat for about 30-45 minutes, or until the chicken is cooked through. Remove the chicken, shred and add back in. Pour in the heavy cream and Parmesan cheese. Simmer on low heat for another 15-20 minutes, or until the soup has thickened and the rice is cooked through.
