Description

Sheet Pan Chicken Fajitas are the epitome of an easy weeknight dinner. Colorful bell peppers and chipotle chicken simmer and caramelize together on a sheet pan. Scoop them onto a tortilla and top with some sour cream and fresh avocado—then enjoy your sizzling supper.

One sheet pan. Just a few other dishes. We’re talking cleanup that’s in the same league as store-bought mac and cheese—but this flavor packs way more punch. 

I love healthy recipes like this that allow you to spend more time enjoying a meal with friends and family and less time prepping and cleaning up.  


Ingredients

For the peppers:

  • 1 red bell pepper, cut into 1/4 inch thick slices
  • 1 orange bell pepper, cut into 1/4 inch thick slices
  • 1 green bell pepper, cut into 1/4 inch thick slices
  • 2 tablespoons extra virgin olive oil
  • 1 teaspoon chopped garlic
  • 1/2 teaspoon salt

For the chicken:

  • 1 1/2 pounds boneless, skinless  chicken tenderloins or breasts cut into 1-inch pieces
  • 2 tablespoons extra virgin olive oil
  • 1 teaspoon seasoned salt
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 2 teaspoons chili powder

Instructions

  1. Preheat your oven to 400 degrees. Combine all the ingredients for the peppers together on one half of a baking sheet pan. Lightly toss together to coat. Repeat the same process for the chicken on the other half of sheet pan.
  2. Bake for 30 minutes, or until the chicken is cooked through and the peppers have caramelized. Turn the broiler on high and broil for 3-5 to get a slight char that classic fajitas are known for.
  3. Serve with shredded cheese, sour cream, avocado or any other desired toppings. Enjoy!

Notes

  • If dark chicken meat is desired, boneless/skinless chicken thighs can be used instead.
  • Use any color or combination of bell peppers that are your favorite or whatever you have on hand!
