Description

Sheet Pan Chicken Fajitas are a perfect weeknight dinner! Colorful bell peppers and chipotle chicken simmer and caramelize together on one sheet pan. Scoop it all into a tortilla, top with some sour cream and fresh avocado and you have a delicious, simple dinner on your hands! Minimal dishes and a scrumptious meal.

Ingredients

Scale

For the peppers:

  • 1 red bell pepper, sliced
  • 1 orange bell pepper, sliced
  • 1 green bell pepper, sliced
  • 2 tablespoons extra virgin olive oil
  • 1 teaspoon chopped garlic
  • 1/2 teaspoon salt

For the chicken:

  • 1 1/2 pounds chicken tenderloins cut into 1-inch pieces
  • 2 tablespoons extra virgin olive oil
  • 1 teaspoon seasoned salt
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 2 teaspoons chili powder

Instructions

  1. Preheat your oven to 400 degrees. Combine all the ingredients for the peppers together on one half of a baking sheet pan. Lightly toss together to coat. Repeat the same process for the chicken on the other half of sheet pan.
  2. Bake for 35-45 minutes, or until the chicken is cooked through and the peppers have caramelized. If you desire a more charred flavor, you can turn the broiler on and broil the chicken and peppers for 3-5 minutes.
  3. Serve with shredded cheese, sour cream, avocado or any other desired toppings. Enjoy!
