Sheet Pan Cajun Chicken Meatballs

We absolutely love this easy chicken meatball recipe! The cajun flavor really kicks things up a notch and puts a fun spin on a weeknight meal. We couldn’t stop eating these straight from the sheet pan!

Cajun Chicken Meatball Ingredients

Ground chicken

This is my favorite ground chicken.

Cajun seasoning

Homemade or store-bought

Egg

Bind the meatballs together. No crumbling meatballs on our watch.

Olive oil

Garlic

Onion

Red or yellow onion can be used.

Bell Peppers

I like to use a mix of green and red bell peppers for a pop of color. But you can use any that you have on hand!

How to Make Cajun Chicken Meatballs

01) Make the meatballs

In a medium bowl, combine the ground chicken, cajun seasoning, garlic, salt and egg until just combined, Be careful not to overmix!

Pro tip: Using your hands is usually the best way to do this.

Then, roll the mixture into 1-inch meatballs.

02) Chop the veggies

Chop the bell peppers and onions into similar sized pieces – about 1-2 inches in diameter. This will make sure that everything cooks at the same rate!

03) Toss everything onto a sheet pan

Lay a piece of parchment paper or foil down onto a sheet pan for easy cleanup and add everything on top. I like to start with placing the meatballs and then arranging the peppers and onions around.

Drizzle everything with olive oil and a dusting of extra cajun seasoning prior to going into the oven.

04) Bake until golden brown

Bake the meatballs until everything is golden brown and sizzling. Make sure the meatballs are cooked through to at least 165 degrees.

Whip up a batch of the homemade cajun ranch and serve as a dipping sauce!

Ingredients

Scale

For the meatballs:

  • 2 pounds ground chicken
  • 1 egg
  • 4 tablespoons cajun seasoning, divided
  • 1 1/2 teaspoons salt
  • 1 tablespoon garlic, chopped
  • 3 bell peppers, cut into 1-inch pieces
  • 1 red onion, cut into 1-inch pieces
  • 2 tablespoons extra virgin olive oil

For the dipping sauce:

  • 1/2 cup mayo
  • 1 teaspoon dried dill
  • 1 teaspoon cajun seasoning
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon garlic powder

Instructions

  1. Preheat your oven to 400 degrees. Line a baking sheet with parchment paper and set aside.
  2. In a large bowl, add together the ground chicken, egg, 2 tablespoons of the cajun seasoning, salt and garlic until the mixture is just combined, being careful to not over-mix. Roll the mixture into 1 or 2-inch round meatballs. Place the meatballs on the sheet pan, leaving room in between each meatball.
  3. Arrange the pieces of bell pepper and onion around the meatballs on the sheet pan. Evenly season everything on the sheet pan with the remaining 2 tablespoons of cajun seasoning. Evenly drizzle with the olive oil.
  4. Bake for 40-45 minutes, or until the meatballs and vegetables are golden brown and cooked through.

For the dipping sauce:

  1. Combine all the ingredients together in a small bowl and mix to combine. Serve the cajun chicken meatballs over a bed of rice or roasted potatoes with dollops of the dipping sauce and garnish with chopped green onion. Enjoy!
