Description

Shaved Brussel Sprout Slaw is a fun twist on a classic, refreshing side dish. Shaved brussel sprouts are tossed together with dried cranberries, walnuts and a homemade honey mustard dressing. Toss it all together for a scrumptious, crunchy, sweet and vibrant slaw to have as a side dish.


Ingredients

For the slaw:

  • 24 oz shaved brussel sprouts
  • 1/2 cup dried cranberries
  • 1/2 cup chopped walnuts

For the dressing:

  • 2 tablespoons dijon mustard
  • 2 tablespoons honey
  • 2 teaspoons white wine vinegar
  • 1 tablespoon finely diced shallot
  • 1/4 cup extra virgin olive oil (plus 1 or 2 tablespoons if needed if too thick)
  • 1/2 teaspoon salt

Instructions

For the slaw:

  1. Toss together the shaved brussel sprouts, cranberries and walnuts together in a large bowl or serving bowl.

For the dressing:

  1. In a small bowl, whisk together the dijon mustard, honey, white wine vinegar and shallot.
  2. Whisk in the olive oil until smooth. Whisk in the salt.
  3. Pour the dressing over the prepared slaw and toss to coat completely. Serve immediately, or refrigerate and prepare up to 24 hours in advance.

Notes

  • You can either shave your own brussel sprouts using a food processor or purchase pre-shaved brussel sprouts.
  • This recipe does very well stored in an air-tight container in the refrigerator! The brussel sprouts get the chance to marinate in the dressing and get all sorts of delicious.
