Why KJ Loves

Sausage, White Bean and Kale Soup

I love how easy this soup recipe is, but yet loaded full of flavor! It’s healthy, hearty and comforting all in one. Our new favorite soup recipe – we devoured it! Bonus: you can get it done within 30 minutes! But, with any soup, the longer the cook time the more flavor.

Soup Ingredients

Sweet Italian Sausage (uncooked)

Sweet Italian sausage is flavored with sweet basil, giving our soup a delicious herby flavor. Feel free to substitute other types of sausage if you want to mix things up (like spicy Italian sausage, for an extra kick)!

Onion (diced)

You’ll want to use a yellow or white onion for this soup recipe.

Garlic (minced)

You can use fresh garlic cloves or jarred minced garlic for convenience.

Cannellini Beans (rinsed, drained)

Great Northern beans make a great substitute if you can’t find cannellini beans.

Stock

Here’s a little soup secret — I love using a combo of chicken stock and beef stock. Together, they create a full-bodied broth that’s simply irresistible. Trust me, investing in good quality stock makes all the difference. I usually grab mine from Whole Foods, like this Kitchen Basics Organic Free Range Chicken Stock.

Kale (de-stemmed, diced)

To de-stem kale, hold the stem with one hand and run your other hand along the stem to strip off the leaves. Then, roughly chop the leaves.

How To Make Sausage, White Bean, & Kale Soup

1

Brown the sausage.

Add the Italian sausage to the bottom of a Dutch oven or soup pot over medium heat. Break it up and cook it until the sausage is browned.

2

Add aromatics.

Add the diced onion and garlic and saute for a few minutes more.

3

Combine and cook.

Add the cannellini beans, chicken stock, and beef stock. Bring everything to a boil over medium-high heat, then reduce to low and let it simmer for 10-15 minutes.

4

Finish with kale.

Stir in the chopped kale and allow the soup to simmer for a couple of minutes before serving. The longer you let the soup simmer, the better the flavors meld together.  If you’re simmering the soup for longer, pour in an extra cup of beef stock as needed.

5

Embrace the comfort

Dish out your soup, shower it with Parmesan, and don’t forget the crusty garlic bread! Wrap your hands around that warm bowl and let the coziness begin.

Soup Recipe Variations

Boost the veggies.

Add extra vegetables to amp up the nutrition. Toss in diced carrots or celery when cooking the onions. Or add diced potatoes right before the broth (they’ll need a little bit of time to cook through).

Indulge a little.

Make your soup richer by adding crispy bacon bits or stirring in a splash of heavy cream just before serving.

Swap the sausage.

Switch up the sausage to keep things interesting. You can use any kind of uncooked sausage, including turkey sausage or chicken sausage.

Slow Cooker Soup

Want to come home to ready-to-eat soup? Here’s how to make sausage, white bean, & kale soup in a slow cooker:

  1. Brown the sausage, onions, and garlic in a skillet.
  2. Transfer to a slow cooker and add the remaining ingredients except kale.
  3. Cook on low for 6-8 hours or high for 3-4 hours.
  4. Stir in kale during the last 30 minutes of cooking.

Sausage, White Bean, & Kale Soup FAQ

Can I freeze Sausage, White Bean, & Kale Soup?

Yes, this soup freezes beautifully! Let it cool completely, then store it in freezer-safe containers for up to 3 months. Thaw overnight in the fridge before reheating.

What can I serve with this soup?

This hearty soup is practically a meal on its own, but it pairs wonderfully with crusty bread or a simple side salad. For a heartier meal, serve your soup with grilled cheese sandwiches.

How can I make this soup spicier?

If you like heat, use hot Italian sausage instead of sweet Italian sausage. You can also add red pepper flakes for some extra spice.
