Sausage & Kale Gnocchi is a simple and delicious dinner recipe. Pillowy clouds of gnocchi are tossed together with browned sausage and wilted, fresh kale. With a short ingredient list and a scrumptious outcome, you’ll have dinner on the table in no time!

What Kind of Gnocchi to Use
Nowadays, there are many different gnocchi options offered in the grocery store. From frozen to dried, to potato to cauliflower. I’ve even seen sweet potato gnocchi in the freezer section!
For this recipe, the best kind of gnocchi to use is potato gnocchi. Specifically, the kind that is found on the shelves in the pasta aisle – not frozen. I’ve been able to find it at Trader Joe’s, Target and my local grocery store chain.
If you are using frozen gnocchi, cook it in a separate pan according to package instructions before adding it into this recipe at the end. Since it has been cooked and frozen, it will be softer when it’s cooked again. The result could be a mushy dish – and we don’t want that!

Sausage & Kale
When it comes to picking out which sausage and kale to use for this recipe, use your favorites!
I like to use a Tuscan kale for this recipe as it holds up nicely and is a more sturdy kale leaf. The color is vibrant green and it sautés very well. If the kale has a lot of thick ribbing running through it, then that will need to be removed as eating a lot of it isn’t very pleasant.
For the sausage, an Italian sausage is best. Depending on your heat tolerance, you can choose mild or hot. I’ll take mild! Italian sausage has a lot of wonderful flavor already built into it, which is great for cooking up a quick, flavorful meal!

How to Serve
After the fluffy gnocchi pillows have been tossed together with the sautéd Italian sausage, kale, butter and garlic, then it’s time to dig in!
Serve this recipe with a sprinkling of Asiago or Parmesan cheese for the ultimate bite. It’s a great recipe for a quick weeknight dinner, date night recipe or comfort food favorite.

Description
Sausage & Kale Gnocchi is a simple and delicious dinner recipe. Pillowy clouds of gnocchi are tossed together with browned sausage and wilted, fresh kale. With a short ingredient list and a scrumptious outcome, you’ll have dinner on the table in no time!
Ingredients
- 16 oz ground mild Italian sausage
- 2 tablespoons butter
- 1 tablespoon garlic, chopped
- 5 oz Tuscan kale, chopped
- 1/2 cup dry white wine
- 16 oz potato gnocchi
- Salt & pepper to taste
- Serve with shredded Asiago or Parmesan cheese
Instructions
- Add the Italian sausage to a large skillet over medium heat to sauté and brown until cooked through, about 5-8 minutes. Remove from the pan and set aside.
- Add the butter into skillet and melt. Add in the garlic and sauté for a few seconds. Add in the chopped kale and sauté for several minutes. Add the Italian sausage back in.
- Pour the white wine into the skillet to deglaze the bottom and allow to simmer until slightly reduced, about a few minutes.
- Meanwhile, cook the gnocchi according to package instructions. Drain and add the gnocchi into skillet with the sausage and kale. Gently toss together to combine.
- Season to taste with salt and pepper, served with shredded cheese and enjoy!
Notes
- Mild or hot Italian sausage can be used.
- If using frozen gnocchi, cook it in a separate pan according to package instructions before adding it in.
- Sub out the white wine with chicken stock if desired. Use a little less as it doesn’t cook down as much.
