Every bite is loaded full of chocolate, mallow, nutty goodness! Top off a warm brownie with a scoop of cold ice cream and you have a match made in heaven.

What is Rocky Road?
Rocky Road is a popular ice cream flavor! Typically, its a chocolate based ice cream with nuts and marshmallows swirled in.
Now, take that concept and collide it together with a perfectly decadent brownie batter – it was meant to be! Rocky road is one of John’s favorites, so I just had to make a rocky road inspired brownie!

Let’s Talk Brownie Batter
When it comes to a good brownie batter, it’s gotta be loaded full of chocolate and extra fudgy, gooey decadence. I love to use my Homemade Boxed Brownie recipe as the base! If you are short on time or don’t want to make a brownie batter from scratch, your favorite box mix works perfectly as well. You gotta do whatever works best for you! But, you at least gotta give this homemade brownie recipe a try because it is SO worth it.

Rocky Road Ingredients
Rocky road ingredients are chocolate, marshmallows and nuts! You can use whatever nut that you prefer, but I would say almonds or walnuts are the most popular options. Personally, I prefer walnuts! I think they add a good buttery, nutty crunch to the brownie.
Up next, the mini marshmallows! Not only are there mini marshmallows folded into the brownie batter, but they are also on top to get nice and golden brown! It adds a fun, melty, toasty effect to the brownies.
And, of course, chocolate! Chocolate chips are folded into a chocolate brownie batter and then topped on top to create extra chocolatey goodness. You can’t go wrong.

What Type of Skillet to Use
In order to get the skillet brownie experience, then I highly recommend using a good cast iron skillet! I have this cast iron skillet and it has worked great! You prepare the brownie batter, stir in the rocky road ingredients, pour it into a greased skillet and put it in the oven. Once it comes out of the oven, it is a show stopper! Imagine serving this brownie skillet on the table with a few scoops of vanilla ice cream in the middle and drizzled with chocolate syrup. You can just dig right on in!
If you don’t have a cast iron skillet on hand or don’t want to use one, then a greased 9×9 pan works just as great!

Ingredients
- 2 sticks (16 tablespoons) butter, melted
- 1/2 cup sugar
- 1/2 cup brown sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 cup flour
- 1/2 cup cocoa powder
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 cup semi-sweet chocolate chips, plus 1/4 cup for topping
- 1 cup chopped walnuts, plus 1/4 cup for topping
- 1 cup mini marshmallows, plus 1/2 cup for topping
Instructions
- Preheat your oven to 350 degrees. In a large bowl, whisk together the butter, sugar and brown sugar until nice and glossy. In a separate small bowl, whisk the eggs until they are foamy on top. Whisk the eggs into the butter and sugar mixture. Whisk in the vanilla extract.
- Using a rubber spatula, fold the flour, cocoa powder, baking soda and salt until a smooth brownie batter forms. Add in 1 cup each of the chocolate chips, chopped walnuts and mini marshmallows and stir to combine. Transfer the batter into a greased cast iron skillet and smooth to an even top.
- Evenly top the prepared skillet brownie with the remaining chocolate chips, walnuts and mini marshmallows as a topping. Bake for 25-30 minutes, or until the brownie center has set or until a toothpick inserted into the middle comes out clean. If you want extra fudgy brownies, take them out around the 25-28 minute mark.
- Let the brownies cool slightly before slicing and serving. Enjoy!
Notes
- If you don’t have the time or ingredients to make a homemade brownie batter, your favorite box mix brownie works great as well!
- Dutch processed cocoa powder or regular cocoa powder can be used.
- A greased 9×9 pan can also be used in place of a skillet if desired.
- Let the brownies cool completely before storing in an air-tight container or bag.
