Roasted Garlic Mashed Potatoes

Roasted Garlic Mashed Potatoes are what garlic mashed potato dreams are made of! Garlic is roasted and whipped into creamy mashed potatoes until smooth. Buttery, garlicky and the perfect mashed potato recipe!


  • 5 pounds Russet or Yukon Gold potatoes, peeled and cubed
  • 1 large garlic bulb (or 2 smaller bulbs)
  • 1 tablespoon extra virgin olive oil
  • 1 stick (8 tablespoons) butter
  • 2 cups heavy cream
  • 1 teaspoon salt

Optional browned butter garlic topping:

  • 1 stick (8 tablespoons) butter
  • 10 garlic cloves, peeled


  1. Preheat your oven to 425 degrees. Cut the tip off of the the garlic bulb, drizzle with the olive oil, wrap in foil and bake in the oven to 30-45 minutes, or until golden brown and roasted. Allow to cool slightly.
  2. Meanwhile, add the cubed potatoes to a large pot, cover with water and bring to a boil. Boil for about 15-20 minutes, or until fork-tender. Drain and add the potatoes back into the same pot to mash or into a large mixing bowl.
  3. Add in the stick of butter, heavy cream and salt. Gently squeeze the bottom of the roasted garlic bulb to squeeze the garlic into the potatoes. Remove any garlic skin that may peel off in the process.
  4. Use a hand mixer or immersion blender to blend until smooth and creamy.

Optional browned butter garlic topping:

  1. If the browned butter garlic topping is desired, add the remaining stick of butter and 10 garlic cloves to a small saucepan over medium-low heat. Allow to melt and bubble down until the butter is perfectly browned. It should be golden brown in color and smell nutty, being careful to not burn.
  2. Make grooves and swirls in the top of the mashed potatoes in their serving dish and spoon the browned butter garlic sauce into the grooves. Remove the garlic cloves if you don’t want to eat large pieces of garlic. Enjoy!


  • The browned butter garlic sauce topping is optional. Add it on prior to serving if desired, removing the garlic cloves if large pieces are garlic are not desired.
