Description

Raspberry Walnut Salad is a vibrant salad loaded with flavor! A homemade raspberry vinaigrette is tossed together with fresh greens, juicy raspberries, crunchy walnuts and creamy feta cheese. Perfect salad to serve along with any meal, serve for a crowd, or to have a delicious salad for lunch. The possibilities are endless with this salad that tastes like Spring!


Ingredients

Scale

For the salad:

  • 56 ounces Spring lettuce mix
  • 12 oz fresh raspberries
  • 1/3 cup chopped walnuts
  • 1/3 cup feta cheese, crumbled

For the dressing:

  • 1 1/2 tablespoons raspberry preserves
  • 1 tablespoon finely chopped shallot
  • 2 teaspoons lemon juice
  • 1/4 teaspoon salt
  • 1/2 cup extra virgin olive oil

Instructions

For the salad:

  1. Put the greens in a large bowl and top with the fresh raspberries, walnuts and feta cheese.

For the dressing:

  1. In a small bowl, combine the raspberry preserves, shallot, lemon juice, salt and olive oil. Whisk together until smooth and combined.
  2. Pour the dressing over the salad and gently toss to coat. Enjoy!

Notes

  • To make this salad in advance, make the dressing and store it separately from the salad. Dress the salad with the dressing when ready to serve.
