Raspberry Mint Mojitos are a fun, vibrant cocktail to sip on all summer long! With summertime officially here, what better way to splash into the season than with these mojitos! Fresh raspberries are muddled together with vibrant mint and sweet honey. White rum and lemon-lime soda fizz up to the top of the glass to make one delicious drink! Garnished with zesty lime slices, mint leaves and sweet raspberries, these Raspberry Mint Mojitos definitely steal the show.

What is a Mojito?
Traditonally, a mojito is a rum-based cocktail paired with fresh citrus, sugar and sparkling soda water.
With this Raspberry Mint Mojito, we are turning up the fun a bit! The addition of fresh raspberries to this classic summer cocktail really helps set it apart. Plus, how can you go wrong with sweet, juicy raspberries? I also subbed honey for the sugar to help give it a little extra depth of sweetness.
When it comes to the mint leaves, pick your best looking ones! Did you know that mint grows like wildflowers? That’s right! My mom didn’t even have to plant any this year and she has multiple mint bushes that pop up wherever they so please.

How to Make a Raspberry Mint Mojito
First off, you want to choose a taller cocktail glass, such as something around 17oz. Then, the fun begins!
Start by putting your raspberries, mint leaves (you can lightly tear them if they are larger) and honey in the bottom of the glass. Use a muddler (such as one like this) to lightly smash and muddle the ingredients together. You want gently break up the raspberries and release the oils from the mint, but not completely blend them up together.
Then, you add in your ice, about half a cup of crushed ice.
Next, you add your liquids! Pour in about 2 shots of white rum and then top the glass off with lemon-lime soda or sparkling soda water (I prefer the sweetness from the lemon-lime soda). Gently give it a stir to combine the ingredients.
Finally, garnish with additional mint leaves, sliced limes and fresh raspberries!

Not only is this mojito delicious and pretty to look at, but it is also easily customizable! If you don’t have raspberries, you could use strawberries, blackberries or even blueberries! The possibilities are endless.
Whip yourself up a Raspberry Mint Mojito, sit back, relax and happy summer!
