Pepperoni Caprese Flatbread is a delicious combination of two beloved favorites: pepperoni pizza and caprese salad! Slices of pepperoni are layered together with gooey, fresh mozzarella, sliced tomatoes and basil on a garlic butter flatbread. Baked until perfectly bubbly, a balsamic reduction drizzle takes this flatbread to the next level!

What Type of Flatbread to Use

Firstly, flatbread is needed for the base of this fun recipe! Typically, you can find pre-made flatbread at your local grocery store. BUT, there are many different kinds! For this recipe, a flatbread that is more like a thin pizza crust is wanted. Try to stay away from the ultra-thin flatbreads that can also be used a tortilla wrap. Those just won’t work for this recipe. A pre-made pizza crust can also be used! That is what I grabbed from Trader Joe’s – their pre-made pizza crusts are in the bakery/bread aisle and come in a long, rectangle shape. 

Caprese Ingredients

Secondly, it’s time to gather the classic caprese salad ingredients: fresh mozzarella, tomatoes, fresh basil and balsamic reduction! For the fresh mozzarella, I opted for the “cherry size” mozzarella balls to keep everything relatively the same size as the pepperoni slices. So, for that reason, cherry or grape tomatoes are also used! Sliced in half, they get nice and caramelized in the oven. Torn, fresh basil leaves add a pop of color and flavor. After the flatbread is done baking, I add on more fresh basil and a balsamic reduction drizzle! What’s your favorite part of a caprese salad? I love the fresh mozzarella and balsamic reduction! 

How to Serve Pepperoni Caprese Flatbread

Finally, after the bubbly flatbread comes out of the oven and is topped with fresh basil and balsamic reduction, it’s time to dig in! With that being said, there’s several different ways to serve this recipe. Here are some serving ideas:

  • Appetizer: cut into grab-and-go slices and arrange on a platter for your guests to dig in!
  • Lunch: how perfect would this flatbread pair with a fresh salad for a flavorful, light lunch?
  • Dinner: pour yourself a glass of wine and dig into some flatbread! A nice salad or hearty side dish help make the flatbread a more complete meal. 

Not only is this flatbread delicious, but it is quick and easy to make! A small ingredient list and minimal prep make this recipe all that much better.

Baked until perfectly bubbly, a balsamic reduction drizzle takes this flatbread to the next level!


Ingredients

Scale
  • 1415 oz flatbread, cut into four squares/rectangles
  • 4 tablespoons butter, melted
  • 1 teaspoon garlic, chopped
  • 4 oz roma or grape tomatoes, halved
  • 8 oz fresh mozzarella balls, “cherry size”
  • 3 oz pepperoni slices (roughly half a cup)
  • 1/2 cup fresh basil leaves, lightly torn. Additional torn leaves for garnish.
  • Balsamic reduction/glaze for drizzling

Instructions

  1. Preheat your oven to 400 degrees. In a small bowl, mix together the melted butter and garlic. Brush the tops of the flatbread with the garlic butter.
  2. Evenly layer on and distribute all of the pepperoni slices, mozzarella cheese, tomatoes and basil onto the buttered flatbreads. Bake for 20 minutes, or until the cheese is melted, bubbly and everything is starting to turn golden brown. Broil the tops for a few minutes if needed to help this process along at the end.
  3. Garnish with additional torn basil leaves and drizzle with the balsamic reduction. Enjoy!

Notes

  • For the flatbread, avoid using the ultra-thin flatbread that can also be used as a tortilla. Try to find ones that are more of a thin pizza crust. I was able to find pizza crust/flatbread at Trader Joe’s and there is also this brand that works great.
  • Serve this flatbread as an appetizer, lunch, dinner or easy weeknight meal option!
  • This recipe can also be made on the grill. Place on top of foil so the bottom of the flatbread doesn’t burn from the grill’s flames.
