Peanut Butter S’mores Bars are a fun twist on a classic dessert! A peanut butter cookie base is swirled together with classic s’mores ingredients: marshmallows and chocolate chunks! Each bite is perfectly gooey, sweet and full of peanut butter flavor.

Peanut Butter Cookie Base

I used my classic Peanut Butter Cookie recipe for the base of these bars and it works as perfectly in bar form as it does in cookies! 

Creamy peanut butter makes the cookie dough extra luscious. Buttery, sweet, nutty and slightly salty. I love how the peanut butter cookie dough base takes the place of a classic graham cracker in a s’mores combo. Trust me, the graham crackers won’t even be missed!

If you do prefer a chunky peanut butter over creamy, you can certainly give it a try! It will result in a peanut-speckled cookie bar with extra crunch.

S’mores Ingredients

S’mores – a dessert that doesn’t need an introduction! Let’s bring the s’mores indoors with these bars. Folding fluffy marshmallows and chocolate chunks into the cookie dough before baking makes this cookie dough hard to resist.

Once it comes from the oven, the chocolate is all sorts of luscious and melted, while the marshmallows that peaked through are golden brown and toasted. Here’s what I use for this recipe:

FAQ’S

Do I need to grease the pan?

Yes, a light spritz of cooking spray or line the baking pan with parchment paper. No one wants their cookie bars sticking to the bottom of the pan!

Can I use crunchy peanut butter?

If you prefer crunchy peanut butter, go for it! It will result in a more crunchy cookie bar. Personally, I like how creamy peanut butter gives the cookie dough a luscious texture.

Can the dough be frozen?

If you aren’t wanting to bake the dough right away, then it can be frozen. Although, I highly recommend scooping the dough into cookie dough balls with a medium-sized cookie scoop. Then, place them on a cookie sheet to freeze before transferring them to a freezer-safe bag. They will be baked at 350 degrees as separate cookies instead of bars, but will be delicious!

Peanut Butter S’mores Bars are a fun twist on a classic dessert! A peanut butter cookie base is swirled together with classic s’mores ingredients: marshmallows and chocolate chunks! Each bite is perfectly gooey, sweet and full of peanut butter flavor.


Ingredients

  • 1 stick (8 tablespoons) butter, softened
  • 1/2 cup sugar
  • 1/2 cup brown sugar
  • 1 large egg
  • 1 cup creamy peanut butter
  • 1 teaspoon vanilla extract
  • 3/4 teaspoon salt
  • 1/2 teaspoon baking soda
  • 1 1/2 cups flour
  • 2 cups mini marshmallows
  • 4 milk chocolate candy bars (such as Hershey’s) broken into 1/2 inch pieces

Instructions

  1. Preheat your oven to 350 degrees. In the bowl of an electric mixer, cream together the butter, sugar and brown sugar on medium speed until light and fluffy, about a couple minutes. Reduce the heat to low and mix in the egg until combined, wiping down the sides of the bowl.
  2. Mix in the peanut butter and vanilla until smooth. Add in the salt, baking soda and flour and mix on low speed until a cookie dough forms.
  3. Use a rubber spatula to fold in the mini marshmallows and chocolate chunks. Evenly press the cookie dough into the bottom of a greased 9×13 ban.
  4. Bake for 25-30 minutes, or until the top is golden brown and the center is set. Allow to cool before slicing and serving. Enjoy!
