- 2 sticks (16 tablespoons) butter, softened
- 1/2 cup sugar
- 1/2 cup brown sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1/2 cup peanut butter
- 2 1/4 cups flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 12 oz semi-sweet chocolate chips
Instructions
- Preheat your oven to 350 degrees. In the bowl of an electric mixer, cream together the butter, sugar and brown sugar on medium speed until light and fluffy, about a couple minutes. Reduce the speed to low and mix in one egg at a time, making sure to wipe down the sides of the bowl in between each addition. Mix in the vanilla extract and peanut butter until smooth.
- With the mixer speed on low, mix in the flour, baking soda and salt until combined and a cookie dough has formed. Fold in the chocolate chips. Use a medium-sized cookie scoop to scoop the cookie dough out into balls onto a non-greased baking sheet, placing them a couple inches apart.
- Bake the cookies for 10-12 minutes, or until slightly golden brown on top. Let them cool for several minutes on the baking sheet before transferring them to a cooling rack to cool completely. Enjoy!
