Ingredients
- 2 Certified Piedmontese Grass Fed, Grass Finished Ribeye Steaks
- 2 teaspoons salt
- 1/2 teaspoon pepper
- 1 tablespoon olive oil
- 2 tablespoons butter
- 1 cup heavy cream
- 1/2 cup blue cheese crumbles
Instructions
- Allow the steaks to come to room temperature about 20 minutes prior to searing. Pat the steaks dry with a paper towel and evenly season both sides of the steaks with salt and pepper.
- Heat the olive oil in a large skillet over medium-high heat. Add the steaks in and allow to sear for 5-7 minutes before flipping. Sear for the other side for another 3-5 minutes before adding the butter into the skillet and reducing the heat slightly so the butter doesn’t burn.
- Carefully tilt the skillet and use a spoon to baste the melted butter over the tops of the steaks for a couple minutes, or until desired doneness is achieved. Remove the steaks from the heat and allow to rest for 5-8 minutes prior to slicing.
- While the steaks are resting, pour the heavy cream into a small sauce pan over low heat and stir in the blue cheese. Bring to a low simmer and stir until the blue cheese is melted into the heavy cream – leaving a few clumps as desired. Remove from the heat.
- Slice the steak against the grain and serve with the blue cheese sauce and additional blue cheese crumbles served over the top. Enjoy!
