I love how fun and easy these Mocha Fudge Mug Cakes are. They are packed full of all the chocolate flavor you could dream of with a hint of espresso to keep you going back for more. Top these off with a dollop of whipped cream, a dusting of cocoa powder and a few extra chocolate chips for good measure. Dig in with a spoon and be as happy as a bug in a rug. Snuggling up with one of these chocolate mug cakes on the couch is my kind of self care!

Who would’ve thought that you could make a cake in a mug in your microwave? It’s pure genius if you ask me. I’m a chocoholic, so the more chocolate chips the better! The espresso powder doesn’t overpower the chocolate, but accents it and gives it a deeper, more rich flavor. They are match made in heaven and given to you in a mug. I don’t think it can get much better than that. Toss all of the ingredients into your favorite mug, whisk it all together, microwave it for a little over a minute, top it off however you desire and then dig in to the mug cake of your dreams.

What Kind of Mug to Use

Start this recipe off by grabbing your favorite coffee mug! One that is more “round” and a bit wider instead of “tall” and skinny works best, in my opinion. Plus, then you have more room on the top for all the toppings! 

A microwave-safe mug is the most important factor since these cakes are made in the microwave. 

I’ve used these glass coffee mugs or these larger ceramic ones. When in doubt, use a mug that has a bit more room (16 oz) in it!

Let’s Make Mug Cakes

First, add all the dry ingredients into the bottom of your desired mug. A mixture of flour, sugar, cocoa powder and espresso powder are the base for these little cakes. Trust me on the espresso powder, it makes the the chocolate flavor pop! Quickly mix all the dry ingredients together so there aren’t any clumps.

Then, in go the wet ingredients! Oil, milk and vanilla extract make a classic cake batter. This recipe is eggless, so you don’t have to worry about that! Mix until all smooth and decadent.

Next, stir in some chocolate chips. The ultimate fudge factor!

Finally, stick the mug in the microwave and try to exhibit some self control. Once they come out of the microwave, add on some more chocolate chips, garnish with a dollop of whipped cream and a sprinkle of cocoa powder. Grab a spoon and dig into mocha fudge cake goodness!

Cocoa Powder: Dutch Processed or Regular?

For this recipe, I highly recommend using Dutch processed cocoa powder. It yields such a rich, full chocolate flavor. Plus, the color is dark and decadent. 

If you don’t have Dutch processed cocoa powder on hand, regular cocoa powder can be used. There will be a color difference along with a slight flavor difference. But, it doesn’t mean that it won’t be delicious! 

One way to explain the difference: dark chocolate vs. milk chocolate. The dark chocolate is going to be more of a deep chocolate flavor, whereas the milk chocolate is more of a regular chocolate flavor. 

How to Serve

As hard as it is to resist the urge to dig into these Mocha Fudge Mug Cakes right away, give them a couple minutes to cool so that you don’t burn your tongue. In the meantime, get your toppings ready to serve!

Here are some topping ideas:

  • Chocolate chips – dark chocolate chips or semi-sweet. 
  • Whipped cream – fresh whipped cream is my personal favorite. 
  • Ice cream – vanilla, chocolate, coffee or caramel ice cream would be great!
  • Cocoa powder – a light dusting!
  • Chocolate covered espresso beans – really take the “mocha” flavor over the top!

Ingredients

  • 3 tablespoons flour
  • 3 tablespoons sugar
  • 2 tablespoons Dutch processed cocoa powder
  • 1/4 teaspoon baking powder
  • 1/4 teaspoon instant espresso powder
  • 3 tablespoons vegetable oil
  • 3 tablespoons milk
  • 1/4 teaspoon vanilla extract
  • 1/4 cup chocolate chips

Topping ideas:

  • Chocolate chips
  • Whipped cream
  • Ice cream
  • Cocoa powder
  • Chocolate covered espresso beans

Instructions

  1. Combine the flour, sugar, cocoa powder, baking powder and espresso powder together in a microwave-safe mug until clump-free.
  2. Add in the oil, milk and vanilla and stir until smooth. Stir in the chocolate chips.
  3. Microwave for 1 minute and 30 seconds, or until a toothpick inserted into the middle comes out clean. Let the mug cake cool for a few minutes before topping with desired toppings. Enjoy!

Notes

  • Dutch processed cocoa powder is highly recommended for this recipe, but regular can also be used.
  • If your microwave cooks hot, check the mug cake at the 1 minute mark to see if it needs another 15-30 seconds.
