Description

Maple Pecan Roasted Sweet Potatoes are perfectly sweet, spiced and caramelized! Cubed sweet potatoes are roasted until tender with warm cinnamon, pure maple syrup and nutty pecans. The result is an easy, healthy and delicious side dish for any ocassion!

Whether it’s a side dish for the holiday table or for a weeknight meal, these Maple Pecan Roasted Sweet Potatoes will become a family favorite!

 


Ingredients

Scale
  • 45 sweet potatoes, peeled and chopped into 1-inch cubes
  • 3 tablespoons extra virgin olive oil
  • 1/4 cup pure maple syrup
  • 1/4 cup coconut sugar
  • 3 teaspoons cinnamon
  • 1/2 teaspoon salt
  • 1 cup pecans, roughly chopped

Instructions

  1. Preheat your oven to 400 degrees. Add the chopped sweet potatoes to a 9×13 baking dish.
  2. Add in the olive oil, maple syrup, coconut sugar, cinnamon and salt and toss to evenly combine.
  3. Roast for 25-30 minutes. Remove from the oven, add in the pecans and toss to combine and roast for another 20-25 minutes or until the sweet potatoes are tender and caramelized.
  4. Garnish with additional pecan pieces if desired, serve immediately and enjoy!
