Hot Cocoa Cookie Tip:

Marshmallow Perfection

Wait to add the mini marshmallows until halfway through the baking process. This will prevent the marshmallows from getting burnt and will result in gooey, sticky marshmallows. 

A Dusting of Magic

I like to finish these cookies by dusting them with a packet of hot cocoa mix. It’s not required, but it takes these cookies to the next level!

Ingredients

Scale
  • 2 sticks (16 tablespoons) butter, softened
  • 3/4 cup sugar
  • 3/4 cup brown sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 cups flour
  • 1/4 cup cocoa powder
  • 1/2 teaspoon salt
  • 1 teaspoon baking soda
  • 12 oz chocolate chips
  • 1 1/2 cups mini marshmallows

Instructions

  1. Preheat your oven to 350 degrees. In the bowl of an electric mixer, beat together the butter, sugar and brown sugar on medium speed until light and fluffy, about a couple minutes. Reduce the speed to low and add in one egg at time, making sure to wipe down the sides of the bowl in between each addition. Mix in the vanilla extract.
  2. With the mixer speed on low, mix in the flour, cocoa powder, baking soda and salt until combined and a dough has formed. Add in the chocolate chips and mix until just combined. Use a tablespoon-sized scoop to scoop the cookie dough into balls onto a non-greased baking sheet, placing each one a couple inches apart.
  3. Bake for 5 minutes, remove the cookies from the oven and gently press 3-4 mini marshmallows into the top of each cookie. Return the cookies to the oven and bake for another 5-6 minutes or until the cookies have set and are cooked through. Allow the cookies to cool slightly on the baking sheet for several minutes before transferring them to a cooling rack to cool completely. Enjoy!
