Serving chicken for dinner is a classic go-to, but this Honey Mustard Herb Skillet Chicken is a deliciously easy way to change things up a bit! No extra fuss is required as it is still a one-pan meal. Isn’t that great? Personally, I love the flavor combination of the honey mustard, fresh herbs and white wine. Perfect to pair with chicken! John even went as far as to say that this meal is in his top 5 favorites now! Winner winner chicken dinner.

What type of chicken to use:

Not only is this dish delicious, but it is very versatile! Meaning, if you don’t have chicken breasts on hand, you can use chicken thighs or legs! I like to opt for a boneless, skinless chicken breast just because it’s easier to serve and you don’t have to worry about keeping the skin crispy, but you definitely could still use that if that is what you have on hand! Boneless, skinless thighs would also work great if you prefer dark meat over white.

It’s not a complete meal without a proper side or two. I love to serve this with my Mashed Sweet Potatoes and Garlic Almond Green Beans. You could even go the route of a classic mashed potato with my Asiago Herb Mashed Potatoes and maybe even some Super Simple Garlic Bread! Dinner is served.

Description

Honey Mustard Herb Skillet Chicken is a chicken dinner packed full of flavor! Chicken breasts are seared until golden brown and then simmered in a sauce of Dijon mustard, honey, white wine and fresh herbs. Each bite is vibrant and decadently delicious. Ingredients

  • 4 boneless, skinless chicken breasts
  • 2 tablespoons extra virgin olive oil
  • 1 shallot, chopped
  • 1 tablespoon chopped garlic
  • 1/4 cup Dijon mustard
  • 1 tablespoon honey
  • 1/2 cup dry white wine
  • 1 1/2 cups chicken stock
  • 2 tablespoons fresh parsley, chopped
  • 1 tablespoon fresh thyme, chopped
  • 1 tablespoon fresh rosemary, chopped
  • Salt and pepper

Instructions

  1. Season both sides of the chicken breasts with salt and pepper. Heat the olive oil over medium heat in a large skillet. Add in the chicken breasts and sear for about 5 minutes, or until golden brown, and then flip and repeat on the other sides. Set the chicken aside on a plate for later use.
  2. In the same skillet, add in the shallot and garlic and quickly sauté for a minute or so. Add in the mustard and honey and stir to create a paste-like consistency. Deglaze the pan with the white wine. Add in the chicken stock, parsley, thyme and rosemary and stir to combine. Bring the sauce to a simmer.
  3. Nestle the chicken breasts back into the sauce and spoon a little bit of the sauce over each chicken breast. Cover with a lid, reduce the heat to low and allow to simmer for about 15-20 minutes, or until the chicken is cooked through. Remove the lid and allow to simmer for another 5 minutes or until the sauce thickens slightly.
  4. Spoon more of the sauce over the chicken and serve with additional chopped, fresh herbs on top if desired.
  • Prep Time: 15 minutes
  • Cook Time: 45 minutes
