Honey Cornbread Waffles with Tequila Berries

Honey Cornbread Waffles with Tequila Berries is a breakfast that you won’t be able to forget! A homemade, slightly sweet, cornbread waffle is topped with bright berries that have been soaked in a dash of tequila and lime zest. Add a dollop of whipped cream and a drizzle of honey on top and you have a breakfast from heaven! Each bite will tickle your tastebuds and make you want to go back for another. 

I just can’t get over how fun this recipe is. Imagine this: you invite guests over for a brunch or you get pulled into hosting one. You could go your typical route and serve up some egg casseroles (which is not a bad thing!) and guests would be happy. Or, you can spice things up a little bit and throw a themed brunch! How often do you get to have fun with brunch?

That’s all you need and you will have some happy guests and full stomachs!

If you are serving these waffles for a brunch crowd, you can whip up a big bowl of waffle batter, set up the waffle machine and let the guests make their own! Everyone will have fun making and eating these waffles.

After the waffles come off the press, top them off with a couple scoops of the tequila berries, a dollop of whipped cream and a drizzle of honey. The tequila berries are slightly sweet and zesty from the fresh lime zest. And whipped cream. You can never go wrong with some whipped cream. The honey drizzle adds just the right amount of sweetness to each bite. You won’t be able to resist these waffles!

Ingredients

Scale
  • 1 cup flour
  • 1 cup yellow cornmeal
  • 1 1/2 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/4 cup honey
  • 2 eggs
  • 1 1/4 cup buttermilk
  • 6 tablespoons melted butter
  • 16 oz strawberries, quartered
  • 6 oz blackberries
  • zest of 1 lime
  • 3 tablespoons sugar
  • 2 tablespoons blue agave (silver) tequila
  • Topping ideas: whipped cream, honey or maple syrup

Instructions

  1. In a large bowl, combine the flour, yellow cornmeal, baking powder, baking soda, salt. Whisk in the honey, eggs, buttermilk and melted butter until a smooth batter has formed.
  2. In a medium bowl, combine the strawberries, blackberries, lime zest, sugar and tequila until the berries are completely coated.
  3. Preheat a waffle machine according to package instructions. Spray the inside of the waffle iron with non-stick cooking spray. Pour about a cup of waffle batter into the waffle machine and let cook for 2-3 minutes, or until the waffle is golden brown. Repeat until all the waffle batter is used.
  4. Serve the waffles with the tequila berries. Whipped cream and additional honey is optional and delicious!

Notes

  • If you don’t want to use tequila for the berries or want to serve these waffles to children, simply omit the tequila. The berries are great without it as well!
  • This recipe makes four 8-inch round waffles.
  • Prep Time: 20 mintes
  • Cook Time: 10 minutes
