Herbed Couscous is a quick and delicious side dish that is perfect to accompany any meal! Comforting pearls of couscous are whisked into a flavorful broth until light and fluffy. Tossed together with vibrant, fresh herbs, this couscous recipe is anything but boring! A side dish ready to eat in under 10 minutes.


  • 2 cups chicken stock
  • 1 tablespoon extra virgin olive oil
  • 2 cups Moroccan-style couscous
  • 1/4 cup fresh parsley, chopped
  • 1 tablespoon fresh chives, chopped
  • 2 teaspoons fresh thyme, chopped
  • 1/2 teaspoon salt


  1. Bring the chicken stock and olive oil to a boil over medium heat in a sauce pan.
  2. Use a fork to whisk the couscous into the stock, cover with a lid and turn off the heat. Allow the couscous to sit covered for a few minutes to soak up all the chicken stock.
  3. Remove the lid and fluff the couscous with the fork. Add in the parsley, chives, thyme and salt and mix to combine. Serve and enjoy!


  • Chicken stock, vegetable stock or water can be used as the base liquid for the couscous.
  • Use Moroccan-style couscous as it is the finest and fastest variety of couscous to cook.
  • If using dried herbs, use 2 teaspoons dried parsley, 1 teaspoon dried thyme and 1/2 teaspoon onion powder to get the onion flavor that the chives would deliver.
