Herb Roasted Potatoes are a side dish loaded with flavor! Baby Yukon gold and red potatoes are tossed together with fresh herbs, olive oil and garlic. Roasted until fork tender and fluffy on the inside all while being crispy and salty on the outside. The perfect potato!

Herb Roasted Potatoes are a side dish loaded with flavor! Baby Yukon gold and red potatoes are tossed together with fresh herbs, olive oil and garlic. Roasted until fork tender and fluffy on the inside all while being crispy and salty on the outside. The perfect potato!

Let’s Talk Potatoes

For this recipe, I like to use baby Yukon gold and baby red potatoes for several reasons. One, baby potatoes are just that much cuter haha! Second, no chopping required! They can be roasted whole and turn out perfectly. Lastly, they make for a colorful potato side dish as the red and yellow potatoes roast together with fresh herbs.

If you can’t find baby potatoes or don’t have any on hand, you can still make this recipe! I would recommend cutting the larger potatoes down to about 2-inch wide max pieces.

I found the perfect sized bags of baby Yukon gold potatoes and baby red potatoes at Target!

 

How to Serve these Herb Roasted Potatoes

When it comes to serving this recipe, not only are these potatoes delicious and fun, but they can be served so many different ways and for so many different occasions! Here’s some ideas:

  • Weeknight side dish – perfect to serve alongside a roasted chicken or pot roast. The possibilities are endless!

Description

Herb Roasted Potatoes are a side dish loaded with flavor! Baby Yukon gold and red potatoes are tossed together with fresh herbs, olive oil and garlic. Roasted until fork tender and fluffy on the inside all while being crispy and salty on the outside. The perfect potato!


Ingredients

Scale
  • 1 pound baby Yukon gold potatoes
  • 1 pound baby red potatoes
  • 1 tablespoon fresh rosemary, chopped
  • 1 tablespoon fresh thyme, chopped
  • 1 tablespoon chopped garlic
  • 2 tablespoons extra virgin olive oil
  • 1 teaspoon salt

Instructions

  1. Preheat your oven to 400 degrees. Add the potatoes, whole, into a 9×13 baking dish. Add in the rosemary, thyme, garlic, olive oil and salt. Gently toss together to coat and combine.
  2. Cover with foil and bake for 30 minutes. Remove the foil, gently stir the potatoes, and roast for another 30 minutes, or until the potatoes are fork-tender and slightly caramelized and browned on the outside.

Notes

  • If you can’t find baby potatoes, large potatoes can be used. Cut them down into 2-inch pieces.
  • This side dish recipe is perfect for weeknight meals, date nights and holidays!
  • Dried herbs can be used instead of fresh. Use 1 teaspoon of each instead of 1 tablespoon.
  • Prep Time: 5 minutes
  • Cook Time: 1 hour
