Chicken Fajita Kabob Ingredients
Chicken (cubed)
You can use chicken breasts or thighs for this recipe, cut into 2-inch cubes.
Bell Peppers (cut)
I like to use a variety of colors, cut into 2-inch pieces.
Onion (cut)
You can use a red onion, yellow onion, or white onion — whatever type you prefer! Cut it into 2-inch pieces.
Fajita Marinade Ingredients
I use this fajita marinade recipe, which calls for pineapple juice, olive oil, lime juice, garlic, and some spices.
Skewers
Ok, so this isn’t “technically” an ingredient, but you’ll need it for the recipe. I like metal skewers since they are reusable and conduct heat well. If you use wooden skewers, make sure to soak them in water for 30 minutes in advance so they don’t catch fire
How To Make Chicken Fajita Skewers
1
Marinate the Chicken
2
Assemble the Kabobs
Thread the marinated chicken onto skewers, alternating with bell peppers and onions. Aim for a ratio of 1 piece of chicken to 2 pieces of vegetables. Leave 2-3 inches at the bottom of each skewer for easy handling.
3
Grill the Skewers
Preheat your grill to medium-high heat. Grill the kabobs for about 10-15 minutes, turning every few minutes. Cook until the chicken is done and the veggies are tender.
4
Serve and Enjoy
Remove from the grill and serve hot with your favorite fajita sides.
5
Wash the dishes. How sad.
Grilling Tips
- Cut all your chicken and veggies into similar sizes for even cooking.
- Use an oven mitt to flip the kabobs. It’s easiest to just grab the handle and flip them quickly.
- Keep an eye on the grill. These beauties cook up quickly, usually in about 10-15 minutes.
- Don’t stress it! Kabobs are a great way to get comfortable with grilling.
How To Serve Chicken Fajita Kabobs

You could also serve these skewers over a bed of Coconut Rice or wrap everything up in a tortilla and dig in!
Don’t forget chips and a marg! (I love these Strawberry Smash Margaritas.)
Chicken Fajita Kabob FAQ
What is fajita marinade made of?
Our fajita marinade combines pineapple juice, olive oil, lime juice, garlic, and a blend of spices for a zesty, flavorful kick.
Which cut of chicken is best for skewers?
You can use chicken breasts or chicken thighs. Breasts are leaner and cook faster, while thighs are more forgiving, even if they’re slightly overcooked.
Do you cut chicken before cooking for fajitas?
Yes, for these kabobs, you’ll want to cut the chicken into 2-inch cubes before marinating and grilling.
How do you cut boneless chicken breasts for skewers?
Start by slicing the breast lengthwise into 1-2 inch wide strips. Then, cut the strips into bite-sized cubes, about 2 inches.
How do you thread chicken on skewers?
Pierce each chicken piece through the center and push it to the end of the skewer, alternating with veggies. Leave space between pieces and at the ends for handling.
How do you keep chicken skewers from sticking to the grill?
Let the chicken sear before trying to move it. This helps it release from the grates more easily.
How often do you flip chicken kabobs on the grill?
Flip them every 3-4 minutes for even cooking and nice grill marks on all sides.
What happens if you don't soak wooden skewers before grilling?
They’re likely to catch fire and burn. Soak them in water for at least 30 minutes to make them less flammable.

Tender, charred chicken is flavored with a zesty, tangy blend of pineapple juice, spices, and a squeeze of lime, stacked between colorful bell peppers and onions.
You just can’t beat a meal on a stick.
Ingredients
- 6 fl oz pineapple juice
- 1/2 cup extra virgin olive oil
- 1 tablespoon lime juice
- 1 tablespoon garlic, chopped
- 2 teaspoons chili powder
- 1 teaspoon ground cumin
- 2 teaspoons salt
- 2 pounds chicken breasts or thighs (boneless and skinless) cut into 2-inch pieces
- 3 bell peppers cut into 2-inch pieces (I like to use a variety of colors such as green, red and yellow!)
- 1 onion, cut into 2-inch pieces
Instructions
- In a small bowl, whisk together the pineapple juice, olive oil, lime juice, garlic, chili powder, cumin and salt. Reserve 1/2 cup of the marinade and set aside.
- Add the chicken pieces to a plastic storage bag and carefully pour the marinade over the top of the chicken. Gently toss to make sure that all the chicken is coated. Marinate the chicken in the refrigerator for at least 1 hour and up to 8 hours in advance. Store the leftover 1/2 cup of marinade in the refrigerator until needed depending on how long you choose to marinate the chicken.
- Before assembling the kabobs, toss the remaining 1/2 cup of marinade together with the bell pepper and onion pieces in a large bowl.
- Build your kabobs by layering about 3 pieces of chicken and 6 pieces of vegetables on each skewer. I like to use the ratio of 2 pieces of vegetables per 1 piece of meat. Discard the remaining marinade.
- Preheat your grill to medium-high heat. Grill the chicken fajita kabobs for about 6-8 minutes on each side, flipping once, until an internal temperature of 165 is reached on the chicken. Enjoy!
Notes
- Leave a couple inches at the bottom of each skewer so that you have a “handle” to flip the kabobs by when you are grilling.
- Try to cut all of the vegetables and meat pieces relatively the same size so that they cook evenly as possible.
