Description

Peach Crisp is full of vibrant, juicy, end-of-summer goodness. 

Fresh peaches are topped with a buttery crisp and baked until golden brown and bubbly.

Top this comforting dessert with a scoop of melty vanilla ice cream and enjoy the perfect blend of gooey peaches, crispy oat and pecan topping, and creamy sweetness. 

This easy dessert can be customized to work for almost anyone. Gluten-free, dairy-free, vegan, nut-free, you name it! Just pick and choose the ingredient combo that fits your needs!


Ingredients

For the filling:

  • 5 peaches, sliced into 1/4 inch slices
  • ¾ cup coconut sugar (or brown sugar)
  • ¼ cup gluten free flour (or regular flour)
  • 1 teaspoon Cinnamon 
  • 1 teaspoon vanilla extract
  • ½ teaspoon almond extract 
  • ½ teaspoon salt 

For the topping:

  • 1 cup gluten free flour (or regular)
  • 1 ½ cup oats 
  • ½ cup finely chopped pecans 
  • ¼ cup coconut sugar (or brown sugar)
  • ½ cup coconut oil, melted (ghee or melted butter can also be used)
  • ¼ teaspoon almond extract 
  • ½ teaspoon vanilla extract
  • ¼ teaspoon salt 
  • ½ teaspoon cinnamon 

Instructions

For the filling: 

  1. Preheat your oven to 350 degrees. 
  2. Add the sliced peaches to a large bowl. Add in the sugar, cinnamon, vanilla & almond extract and flour and gently toss to combine. 
  3. Pour the filing into a 9×13 pan or one of similar size.

For the topping:

  1. In a separate bowl, add the flour, oats, pecans and sugar together. Pour in the coconut oil, almond extract, vanilla, cinnamon and salt and stir to combine until a loose crumble forms. 
  2. Evenly top the prepared filling with the topping mixture. 
  3. Bake for 40-45  minutes or until the topping is golden brown and the peaches are bubbly and caramelized. 
  4. Serve warm with a scoop of vanilla ice cream and enjoy!

Notes

  • This recipe can easily be made gluten-free, dairy-free, vegan or grain free depending on preference!
  • Peaches can be peeled or un-peeled.
  • If you want grain free, remove the oats from the topping and adjust the gluten free flour to 1 1/2 cups and the crushed pecans to 1 1/2 cups.
  • Serve with regular vanilla ice cream or dairy free vanilla ice cream.
