Description

Frosted Oatmeal Raisin Cookie Bars will win over anyone and everyone who eats one. Warm, cinnamon speckled oatmeal cookie bars studded with sweet raisins and topped with a creamy, cinnamon cream cheese frosting. It’s a warm, comforting and delicious bite! If you ask me, everything is better with cream cheese frosting.


Ingredients

For the cookie bars:

  • 2 sticks (16 tablespoons) butter, softened
  • 1/2 cup sugar
  • 1/2 cup brown sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 cups flour
  • 1 cup old fashioned rolled oats
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1/2 teaspoon ground cinnamon
  • 1 cup raisins

For the frosting:

  • 8 oz cream cheese, softened
  • 1 stick (8 tablespoons) butter, softened
  • 2 cups powdered sugar
  • 1 teaspoon vanilla extract
  • 1/8 teaspoon ground cinnamon

Instructions

For the cookie bars:

  1. Preheat your oven to 350 degrees. In the bowl of an electric mixer, cream together the butter, sugar and brown sugar on medium speed until light and fluffy, about a couple minutes. Reduce the speed to low and mix in one egg at a time, making sure to wipe down the sides of the bowl in between each addition. Mix in the vanilla.
  2. With the mixer speed on low, mix in the flour, oats, baking soda, salt and cinnamon until combined and a cookie batter has formed. Gently mix in the raisins. Evenly press the cookie dough into the bottom of a greased 9×13 pan.
  3. Bake for 23-25 minutes, or until the top is slightly golden brown and a toothpick inserted into the middle comes out clean. Let the cookie base cool completely before frosting.

For the frosting:

  1. In the bowl of an electric mixer, cream together the cream cheese and butter on medium speed until light and fluffy, about a couple minutes. Reduce the speed to low and add in one cup of powdered sugar at a time until combined and smooth. Mix in the vanilla extract and cinnamon.
  2. Evenly spread the frosting over the top of the cooled cookie bar base. Enjoy!
