Beef Tenderloin Tips
I used Certified Piedmontese Grass-Fed Tenderloin Tips.
Extra Virgin Olive Oil
Yellow Onions
I like to slice these nice and thin so they melt into the sauce.
Salt
Dried Thyme
Garlic (chopped)
Fresh garlic works best here, but you could use the jarred stuff to make life easier.
Dry White Wine
Any type of white wine works, as long as it’s dry!

How To Make French Onion Braised Beef Tips
1
Prep & sear.
Heat 1 tablespoon of olive oil in a large Dutch oven over medium heat.
Working in batches (don’t crowd the pan!), sear the tenderloin tips until they are golden brown on all sides.
Set the seared beef aside on a plate.
2
Caramelize the onions.
Add the remaining 1 tablespoon of olive oil to the Dutch oven.
Toss in those thinly sliced onions. Reduce the heat to low and let them slowly caramelize for about 15 minutes. Stir occasionally — we want them deeply golden but not burnt!
3
Add Aromatics & Wine
When the onions are deeply caramelized, stir in the salt, thyme, and garlic.
Cook until fragrant, about 30 seconds.
Pour in the white wine and scrape up all those flavorful brown bits from the bottom of the pan.
Return the beef to the pan with the onions.
4
Simmer the sauce.
Add the beef stock and bring everything to a gentle boil over medium heat.
Reduce the heat to low, and simmer for 25-30 minutes, until the french onion beef is tender and cooked through, and the sauce has thickened slightly.
5
Get cozy and enjoy!
Spoon these tender beef tips and that incredible onion sauce over a cloud of mashed potatoes.
Grab your fork, sink in, and prepare for the coziest dinner of your life.
(Pro tip: Keep some crusty bread nearby – you won’t want to waste a drop of that sauce!)

French Onion Tenderloin FAQ
Can I use other cuts of beef?
While other cuts will work, the tenderloin tips are ideal.
What kind of wine should I use?
Any dry white wine will work well. I like Pinot Grigio or Sauvignon Blanc.
I don't drink wine — what can I substitute?
You can replace the wine with additional beef stock plus 1-2 tablespoons of balsamic vinegar to add depth. The flavor will be slightly different but still delicious!
My onions are burning — what am I doing wrong?
If your onions are burning, your heat is probably too high. Keep it on low and stir occasionally. It’s better to take your time than rush this step!
Why aren't my onions caramelizing?
Caramelizing onions takes time. If they’re not turning golden, they might need:
- More time
- Lower heat
- A pinch of salt
- More frequent stirring
What's the best way to reheat leftovers?
Low and slow is the way to go! Heat gently on the stovetop, stirring occasionally. You can also microwave in short bursts.

Notes
- Nutritional information for this recipe is only an estimate. The accuracy of the nutritional information for any recipe on this site is not guaranteed.
- This recipe works best using a cut of beef that is tender (such as these tenderloin tips). If using a tougher cut of meat (chuck roast, stew meat etc.), the beef will need a couple hours of braising time in order to be tender. If you’re not able to use tenderloin tips, I’d recommend subbing in cubed sirloin steak.
