Easy Cornbread Stuffing

Description

A Thanksgiving menu would not be complete without stuffing. If you want the traditional dish without the hassle, this Easy Cornbread Stuffing recipe is for you. Ditch the drama of stuffing a turkey and make a simple baked stuffing in a few easy steps.  Toasted sweet cornbread is layered with sautéed veggies and fresh herbs. A splash of chicken stock marries these flavors perfectly, and the stuffing is baked to tantalizing golden perfection.All the flavor and holiday festivity. None of the “traditional” hassle.


Ingredients

  • 15 oz cornbread mix, prepared & baked according to instructions. 
  • 1 stick butter
  • 1 small onion, diced
  • 3 stalks celery, diced
  • 1 tablespoon garlic, chopped
  • 2 tablespoons fresh rosemary, chopped
  • 1 tablespoon fresh thyme,, chopped
  • 1 teaspoon salt
  • ½ teaspoon pepper
  • 2 cups chicken stock

Instructions

  1. Preheat your oven to 400. Cube the cornbread  into 2-inch cubes and evenly arrange on a baking sheet. Bake for 5-10 minutes or until the cornbread is perfectly toasted and golden brown. Remove from the oven and allow to cool.
  2. Meanwhile, melt the butter in a large skillet over medium heat. Add in the onion, celery and sauté for several minutes. 
  3. Add in the garlic, rosemary, thyme, salt and pepper and continue to sauté until fragrant, a few minutes more. Remove from the heat. Gently toss the cornbread in until evenly coated. 
  4. Spray a 2.5 – 3 quart baking dish with cooking spray. Transfer the cornbread stuffing to the prepared baking dish. 
  5. Evenly pour the chicken stock over the entire prepared stuffing, cover with foil and bake for 25 minutes.  Remove the foil and bake for another 10 minutes, or until the stuffing is golden brown and delicious. 
  6. Serve warm and enjoy!
