Oh my goodness – we are OBSESSED with this dill pickle chicken salad! It didn’t even make it 24 hours in our household before the bowl was wiped clean. It’s such a fun spin on chicken salad you just have to give it a try!

Dill Pickle Chicken Salad Ingredients

Chicken (cooked)

If you really want to amp up the pickle flavor, cook some Dill Pickle Grilled Chicken (SO good). But if you’re going for easy, you can pick up a rotisserie chicken from the store. Cube or shred your chicken, depending on what texture you like the best. 

Mayo

Full-fat or light mayo both work here. It’s a dairy-free way to add creaminess to this chicken salad recipe. Make sure you go with real mayo, not Miracle Whip (which has a different flavor). 

Dijon Mustard

I love the extra tanginess this adds. 

Fresh Dill (chopped)

You can’t have dill pickle chicken salad without dill! To prepare fresh dill, remove the leaves from the stems and chop the leaves up with a sharp knife.

Green Onion (diced)

Green onions are the perfect way to bring a fresh, mild onion flavor to the salad.

Dill Pickles (chopped)

The star of the show! I love these Fresh Italian Dill Spears, but you can use whatever type of pickles you love best. Want to kick up the heat? Use spicy pickles! Or do you like it sweet? Use a sweet relish pickle!

Other optional add-ins:

If you want, you could dice up some fresh cucumbers, red onions, or diced celery. This chicken salad recipe is quite flexible, so mix up your favorite concoction of ingredients!

How To Make Dill Pickle Chicken Salad

Chop up.

Chop or shred your chicken, and then chop up your remaining ingredients. You can chop each ingredient as finely or as roughly as you want for a chicken salad texture that’s exactly how you like it.

Mix up.

Mix all the ingredients together and your lunch is ready. It’s that easy!

Wash the dishes. How sad.

Serving Ideas

Healthy dill pickle chicken salad can be served in so many different ways — on a croissant, in a lettuce wrap, or stuffed in a pita. 

You can also serve it with your favorite crackers or alongside some veggies. (Eating it straight out of the bowl is also highly encouraged 👍)

Ingredients

Scale
  • 2 cups chicken, cooked and chopped
  • 1 cup mayo
  • 2 tablespoons Dijon mustard
  • 2 tablespoons fresh dill, chopped
  • 1 green onion, diced
  • ½ cup dill pickles, chopped (about 34 pickle spears)

Other add ins that can be used:

  • Fresh cucumber
  • Red onion 

Instructions

  1. Add the chicken, mayo, Dijon mustard, dill, green onion and dill pickles to a bowl. Stir to combine.
  2. Serve as-is or with crackers or as a sandwich on bread or a croissant. Enjoy!

  • Use my Dill Pickle Grilled Chicken to take this recipe up a notch even more! Otherwise, I like to use roasted chicken breasts for my chicken salad recipes.
