Why KJ Loves

Dairy-Free Chicken Tater Tot Casserole

Dairy-Free Chicken Tater Tot Casserole

Being from the Midwest, I love a good casserole! But, since being dairy free, I needed to make a version that I could still eat and was equally as comforting. This dairy-free chicken tater tot casserole is just that! Cozy, heart warming and perfectly bubbly and golden brown.

Chopped carrots, onion and celery on a cutting board.

Dairy-Free Tater Tot Casserole Ingredients

Chicken (boneless, skinless)

I like to cut the chicken into one-inch cubes. If you’re serving young kids, you may want to dice it in smaller pieces for easier eating.

Extra Virgin Olive Oil

For searing the chicken and vegetables to golden perfection.

Veggies (diced)

The classic trio of onion, carrots, and celery creates a flavorful base. Feel free to add other vegetables that you enjoy!

Garlic (chopped)

Fresh garlic adds so much flavor to this dairy-free tater tot casserole recipe. But you can use the jarred stuff to save time!

Seasonings

Salt, dried thyme, and dried rosemary bring depth to the sauce. If you want to use fresh herbs instead, double the amounts.

Coconut Cream

This dairy-free alternative creates a rich, creamy sauce. Make sure you grab coconut cream (not coconut milk) for the best results.

Chicken Stock

You can adjust how much chicken stock you use to get the consistency you like. You’ll need around 1½ to 2 cups.

Frozen Tater Tots

Keep them frozen until you’re ready to bake — this helps them get extra crispy. If you’re making this a gluten-free tater tot casserole recipe, make sure to get gluten-free tots!

How To Make Dairy-Free Tater Tot Casserole

1

Brown the chicken.

Heat olive oil in a large oven-safe skillet or braiser. Add the cubed chicken and sear until golden brown, about 8-10 minutes.

A note on pans: A 3 1/2 quart braiser or large oven-safe skillet is perfect for this recipe. If you’re using a regular baking dish, no worries. Just transfer your filling from a regular stovetop pan!

2

 Sauté the vegetables.

Add the onion, carrots, celery, and garlic. Cook until the vegetables start to soften and lightly brown.

3

Make the sauce.

Stir in the herbs and seasonings. Pour in the coconut cream and chicken stock (about 1½ to 2 cups). Simmer for about 5 minutes until slightly thickened..

4

Top with tots.

Preheat your oven to 400°F. Arrange the frozen tater tots in an even layer over the chicken casserole filling.

5

Bake until bubbly.

Bake your dairy-free tater tot casserole for 50-55 minutes, or until the tots are golden brown and crispy. If needed, broil for 2-3 minutes at the end to get them extra crispy.

Make-Ahead Options

You can prepare the chicken and vegetable filling up to 2 days ahead. Store it in the refrigerator, then reheat gently before topping with tots and baking.

Reheating Leftovers

In the oven: Place the casserole in a 350°F oven for 15-20 minutes until heated through. This helps maintain some crispiness in the tots.

In the microwave: While not ideal for crispy tots, it works in a pinch! Heat individual portions for a few minutes, stirring halfway through.

How To Serve

This tater tot casserole is a complete meal on its own, but here are some serving ideas:

  • Sprinkle with fresh parsley for a pop of color
  • Add a side of steamed green beans or roasted broccoli
  • Serve with a crisp green salad

Dairy-Free Tater Tot Casserole FAQ

Can I use coconut milk instead of coconut cream?

For the best creamy texture, stick with coconut cream. Coconut milk is too thin and may make your casserole watery.

Is this tater tot casserole gluten free?

Yes! Unlike traditional casseroles that use cream of chicken soup or flour, this recipe is gluten-free. Just double-check that your tater tots are gluten-free (most major brands are!).

What size pan should I use?

You’ll need a 3 1/2 quart braiser skillet or large oven-safe skillet. If you don’t have one, you can use a stovetop pan and a baking dish. Make the chicken casserole filling on the stove, and then transfer it to a baking dish. Top with tater tots and bake!

How do I store leftovers?

Store your chicken casserole leftovers in an airtight container in the refrigerator for up to 3 days. The tots won’t stay as crispy, but it will still taste delicious!

Can I add more vegetables?

Absolutely! Green beans, peas, or corn would all work well. Just make sure not to add too many watery vegetables that could make the sauce too thin.

What can I serve with this casserole?

This is really a complete meal in one dish! But if you want something extra, a simple side salad would be perfect. Plus, don’t forget dessert!
