If you’re looking to amp up your weekly dinner plan, this shrimp recipe is for you! Tuscan Garlic Shrimp have SO much flavor and come together in under 30 minutes!

Shrimp
To avoid extra work, I prefer going with pre-peeled and deveined shrimp. You can choose if you want to cut off the tails before cooking.
Uncooked vs. Cooked
Uncooked shrimp is the best for this recipe. If you have to use cooked shrimp, make sure you don’t overheat it, or it will turn out rubbery and tough.
Fresh or frozen
You can go either fresh or frozen. But if it’s frozen, defrost the shrimp in advance!
Wild caught
If you can get your hands on some wild-caught shrimp, go for it! I found some at my local Target in the freezer section for less than $10.

Other Ingredients
Sun-dried tomatoes
Heavy cream
Fresh spinach leaves
Grated parmesan cheese
Olive Oil
Garlic
Onion
Salt and pepper
Basil for garnish

How to Make Creamy Tuscan Garlic Shrimp

Sear shrimp.
Start by seasoning the shrimp with salt and pepper. Then, add the oil to a large skillet over medium heat.
Once the oil is heated, add the shrimp to the skillet and cook for a few minutes on each side until the shrimp is just pink and develops a sear. Don’t overcook it, though, or you’ll end up with tough shrimp! Remove the shrimp from the skillet and set it aside for later use.

Saute the onion, garlic, and sun-dried tomatoes.
Add in the onion and garlic and sauté for several minutes or until the onion turns translucent and fragrant. Roughly chop up the sun-dried tomatoes and add them to the skillet.

Add cream, spinach, parmesan, and shrimp.
Pour in the heavy cream and stir to combine. Stir in the spinach leaves and parmesan cheese. Then, add the shrimp back into the skillet and stir to coat.

Simmer and thicken.
Allow the creamy Tuscan garlic shrimp to simmer for several minutes until the sauce has thickened, and the shrimp is cooked through.

How to Serve Creamy Tuscan Garlic Shrimp
Serve creamy Tuscan garlic shrimp over pasta, orzo, or couscous. Then garnish with chopped basil and enjoy!

Ingredients
- 1 pound shrimp – raw, peeled and deveined (tails on or off)
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- 2 tablespoons evoo
- 1 small onion, diced
- 1 tablespoon garlic, chopped
- 7 oz jar sun dried tomatoes, drained and roughly chopped
- 1 3/4 cup heavy cream
- 2 cups fresh spinach leaves, loosely packed
- ½ cup grated parmesan cheese
- Basil for garnish
Instructions
- Season the shrimp with the salt and pepper. Heat the oil in a large skillet over medium heat. Add in the shrimp and sear on both sides until just starting to turn pink and seared. Remove from the pan and set aside.
- Add in the onion and garlic and sauté for several minutes or until starting to turn translucent and fragrant. Add in the sun dried tomatoes.
- Pour in the heavy cream and stir to combine. Stir in the spinach leaves and parmesan cheese and add the shrimp back into the skillet and stir to coat.
- Allow to simmer for several minutes until the sauce has thickened and the shrimp is cooked through.
- Serve over pasta, orzo, couscous or mashed potatoes, garnish with chopped basil and enjoy!
