Churro Waffles

Churro Waffles are every bit as decadent as they sound. A buttermilk waffle batter speckled with cinnamon is poured into the waffle iron and cooked until crispy and golden brown. Next, each waffle is brushed with melted butter and coated with a cinnamon sugar until completely covered. Top with a dollop of whipped cream and a drizzle of dark chocolate ganache and you have a churro-lover’s dream come true!



For the waffles:

  • 1 1/2 cups buttermilk
  • 2 large eggs
  • 4 tablespoons butter, melted and cooled
  • 1 1/2 cups flour
  • 2 1/2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 1/2 teaspoon cinnamon
  • 1 tablespoon sugar

For the cinnamon-sugar coating:

  • 4 tablespoons butter, melted
  • 1/2 cup sugar
  • 1 teaspoon cinnamon

For the dark chocolate ganache:

  • 2 cups heavy cream
  • 1/2 cup dark chocolate chips
  • Additional whipped cream for topping if desired


For the waffles:

  1. Preheat your waffle iron. In a large bowl, whisk together the buttermilk, eggs and melted butter until combined. Add in the flour, baking powder, salt, cinnamon and sugar and whisk until a smooth batter forms.
  2. Spray the preheated waffle iron with non-stick spray and pour about 1/2 cup – 3/4 cup of batter into the waffle and cook until the waffle is golden brown and crispy on the outside. Your waffle iron typically has a self timer to let you know when the waffles are ready. Repeat until all the batter is used.

For the coating:

  1. Combine the sugar and cinnamon together in a bowl and have the melted butter ready in a separate bowl. Brush each waffle entirely with the melted butter and coat with the cinnamon sugar. I find it easiest to do this on a sheet pan. Remember, the cinnamon sugar will stick wherever the butter is!

For the dark chocolate ganache:

  1. Heat the heavy cream on low heat in a small sauce pan until it just starts to simmer, about a few minutes. Add in the dark chocolate chips and whisk until smooth. Remove from the heat and serve with the waffles to pour over as a topping along with additional whipped cream if desired. Enjoy!


  • The above waffle cooking directions are if you are using an 8-inch round waffle iron. If you have a four-square waffle iron, you will need to pour in more batter to fill it.
