Churro Waffles

Churro Waffles are every bit as decadent as they sound. A buttermilk waffle batter speckled with cinnamon is poured into the waffle iron and cooked until crispy and golden brown. Next, each waffle is brushed with melted butter and coated with a cinnamon sugar until completely covered. Top with a dollop of whipped cream and a drizzle of dark chocolate ganache and you have a churro-lover’s dream come true!

Waffles are a fun and delicious breakfast, and putting this churro twist on them sure does kick them up a notch! Starting with a traditional buttermilk waffle batter. Sprinkle in a little cinnamon and the churro flavors start to come alive. When they are cooking in the waffle iron, the waffles even start to smell like churros! I couldn’t wait to dig into one of these crispy, golden brown waffles.

Coating each waffle with melted butter and rolling them in a cinnamon-sugar mix gives the true churro effect that we all love. I mean, how can you resist a cinnamon-sugar coated waffle?! I barely could. Keep in mind that wherever the butter gets, that’s where the cinnamon-sugar will stick. Coat that baby! What comes next is one of my favorite parts: TOPPINGS.

The toppings are really what pushes these churro waffles over the top. We’re talking whipped cream and a dark chocolate ganache. Dark chocolate ganache can sound scary to make, but it is one of the most simple and decadent things you can do.

All you need for the dark chocolate ganache are two simple ingredients:

  • Whipped Cream
  • Dark Chocolate Chips

See? You had nothing to fear. You simply heat the heavy cream over low heat and whisk in the chocolate chips until they are melted and smooth. Then, you let it cascade down the sides of your churro waffles and try to have the self control to not eat it all at once. Or do, whatever works for you 🙂 .

Whip up a batch of these Churro Waffles and you won’t be disappointed! Would you eat these for breakfast or dessert? I honestly think they could go either way! How great would they be with some crispy, salty bacon in the morning? I’m alread day-dreaming.

Description

Churro Waffles are every bit as decadent as they sound. A buttermilk waffle batter speckled with cinnamon is poured into the waffle iron and cooked until crispy and golden brown. Next, each waffle is brushed with melted butter and coated with a cinnamon sugar until completely covered. Top with a dollop of whipped cream and a drizzle of dark chocolate ganache and you have a churro-lover’s dream come true!

Ingredients

Scale

For the waffles:

  • 1 1/2 cups buttermilk
  • 2 large eggs
  • 4 tablespoons butter, melted and cooled
  • 1 1/2 cups flour
  • 2 1/2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 1/2 teaspoon cinnamon
  • 1 tablespoon sugar

For the cinnamon-sugar coating:

  • 4 tablespoons butter, melted
  • 1/2 cup sugar
  • 1 teaspoon cinnamon

For the dark chocolate ganache:

  • 2 cups heavy cream
  • 1/2 cup dark chocolate chips
  • Additional whipped cream for topping if desired

Instructions

For the waffles:

  1. Preheat your waffle iron. In a large bowl, whisk together the buttermilk, eggs and melted butter until combined. Add in the flour, baking powder, salt, cinnamon and sugar and whisk until a smooth batter forms.
  2. Spray the preheated waffle iron with non-stick spray and pour about 1/2 cup – 3/4 cup of batter into the waffle and cook until the waffle is golden brown and crispy on the outside. Your waffle iron typically has a self timer to let you know when the waffles are ready. Repeat until all the batter is used.

For the coating:

  1. Combine the sugar and cinnamon together in a bowl and have the melted butter ready in a separate bowl. Brush each waffle entirely with the melted butter and coat with the cinnamon sugar. I find it easiest to do this on a sheet pan. Remember, the cinnamon sugar will stick wherever the butter is!

For the dark chocolate ganache:

  1. Heat the heavy cream on low heat in a small sauce pan until it just starts to simmer, about a few minutes. Add in the dark chocolate chips and whisk until smooth. Remove from the heat and serve with the waffles to pour over as a topping along with additional whipped cream if desired. Enjoy!

Notes

  • The above waffle cooking directions are if you are using an 8-inch round waffle iron. If you have a four-square waffle iron, you will need to pour in more batter to fill it.
