Description

Chocolate Cream Pies are a scrumptious, homemade version of a classic, childhood treat. Two chocolate cookies are smooshed together by a dollop of cream cheese frosting. The result is a handheld treat so good it will disappear before you know it!

Ingredients

Scale

For the cookies:

  • 2 sticks (16 tablespoons) butter, softened
  • 3/4 cup sugar
  • 3/4 cup brown sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 cups flour
  • 1/4 cup cocoa powder (Dutch processed preferred)
  • 1/4 teaspoon salt
  • 1 teaspoon baking soda

For the frosting:

  • 8 oz cream cheese, softened
  • 2 1/2 cups powdered sugar
  • 1/2 teaspoon vanilla extract

Instructions

For the cookies:

  1. Preheat your oven to 350 degrees. In the bowl of an electric mixer, cream together the butter, sugar and brown sugar on medium speed until light and fluffy, about 5 minutes. Reduce the speed to low and mix in one egg at a time, wiping down the sides of the bowl in between each addition. Mix in the vanilla.
  2. Add in the flour, cocoa powder, salt and baking soda and mix until just combined. Use a medium-sized cookie scoop to scoop the cookie dough into balls out onto a baking sheet pan, placing them each a few inches apart.
  3. Bake for 10-12 minutes, or until the cookies have just set. Allow to cool for a few minutes on the baking sheet before transferring them to a cooling rack to cool completely. Repeat until all the cookie dough has been used.

For the frosting:

  1. Cream together the cream cheese, powdered sugar and vanilla in the bowl of an electric mixer until smooth.
  2. Assemble the cream pies by turning half of the cooled cookies over and using a medium-sized cookie scoop to evenly dollop a scoop of frosting on each turned over cookie. Top each prepared cookie with the remaining cookies and gently smoosh them together to create the chocolate cream pies. Enjoy!

Notes

  • Regular cocoa powder can be used instead of Dutch processed if desired.
  • Store the cream pies in an air-tight container.
