Description
Chocolate Cream Pies are a scrumptious, homemade version of a classic, childhood treat. Two chocolate cookies are smooshed together by a dollop of cream cheese frosting. The result is a handheld treat so good it will disappear before you know it!
Ingredients
For the cookies:
- 2 sticks (16 tablespoons) butter, softened
- 3/4 cup sugar
- 3/4 cup brown sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 2 cups flour
- 1/4 cup cocoa powder (Dutch processed preferred)
- 1/4 teaspoon salt
- 1 teaspoon baking soda
For the frosting:
- 8 oz cream cheese, softened
- 2 1/2 cups powdered sugar
- 1/2 teaspoon vanilla extract
Instructions
For the cookies:
- Preheat your oven to 350 degrees. In the bowl of an electric mixer, cream together the butter, sugar and brown sugar on medium speed until light and fluffy, about 5 minutes. Reduce the speed to low and mix in one egg at a time, wiping down the sides of the bowl in between each addition. Mix in the vanilla.
- Add in the flour, cocoa powder, salt and baking soda and mix until just combined. Use a medium-sized cookie scoop to scoop the cookie dough into balls out onto a baking sheet pan, placing them each a few inches apart.
- Bake for 10-12 minutes, or until the cookies have just set. Allow to cool for a few minutes on the baking sheet before transferring them to a cooling rack to cool completely. Repeat until all the cookie dough has been used.
For the frosting:
- Cream together the cream cheese, powdered sugar and vanilla in the bowl of an electric mixer until smooth.
- Assemble the cream pies by turning half of the cooled cookies over and using a medium-sized cookie scoop to evenly dollop a scoop of frosting on each turned over cookie. Top each prepared cookie with the remaining cookies and gently smoosh them together to create the chocolate cream pies. Enjoy!
Notes
- Regular cocoa powder can be used instead of Dutch processed if desired.
- Store the cream pies in an air-tight container.
