Chipotle Jack Burgers are the perfect reason to fire up your grill! A classic burger gets a spin. The patties are packed full of flavor from the seasonings and chipotle powder, topped off with zesty, melty pepperjack cheese and smeared with smoky chipotle mayo. Add in some guac and pico and you’re ready to party! A party in your mouth, that is.

Grilling up a batch of burgers is a great way to spend some time outside and take a second to slow the pace down. Then hurry it back up because you won’t be able to resist these burgers for very long! Once you bite into one, it is going to be an “ooohhhh myyy” effect! Well, at least thats what I did haha. John loved this spin on a classic burger and went back for seconds! We just couldn’t stop eating them.

Let’s talk toppings – one of the most important parts! You’ll generously smear to top and bottom buns with a homemade, smoky chipotle mayo. Don’t skimp on this – it’s SO good! From there, you can choose your traditional toppings of lettuce and tomato if you would like, but I highly reccomend you go with some fresh pico de gallo and guac! Heck, you can even buy fresh, store-bought pico and guac if you don’t want to take the time to whip some up! Add in some guac and pico and you’re ready to party! A party in your mouth, that is.


Ingredients

For the burgers:

  • 1 1/2 pounds ground beef
  • 1 egg
  • 2 teaspoons seasoned salt
  • 1 tablespoon chipotle powder
  • 1/4 cup rolled oats
  • 4 slices pepperjack cheese

For the chipotle mayo:

  • 1/2 cup mayo
  • 1 teaspoon chipotle powder
  • 1/4 teaspoon liquid smoke

Topping ideas:

  • Brioche buns (or regular)
  • Guac
  • Pico de gallo

Instructions

For the burgers:

  1. Preheat your grill to a medium-high heat. In a large bowl, combine the ground beef, egg, seasoned salt, chipotle powder and rolled oats. Gently mix together until completely combined. Evenly divide the meat mixture into fourths. Roll each fourth into a ball in your hands and gently flatten to desired burger thickness, making sure the center is slightly thinner than the edges to insure even cooking.
  2. Place the burgers on the grill and grill on each side for about 5-8 minutes, or until desired doneness is achieved. Place the cheese slices directly on top of the burgers within the last few minutes of cooking to get a melty cheese. If you like your buns to be grilled as well, place them on the top grate of the grill at this time until the cheese is melted and the burgers are cooked through.

For the chipotle mayo:

  1. In a small bowl, stir to combine the mayo, chipotle powder and liquid smoke. Build the burgers by smearing the chipotle mayo on the bottom sides of the buns, placing the burgers on top and then followed by desired toppings and the top bun. Enjoy!

  • I used 85/15 beef for this recipe
  • Prep Time: 20 minutes
  • Cook Time: 15 minutes
