Tips For Making Chipotle Jack Burgers
Don’t use lean beef.
Now’s not the time to go “healthy.” You’re eating a hamburger, for goodness sake. For the juiciest, most flavorful burgers, you’ll want no leaner than 80%.
Don’t over-mix the beef.
Over-mixing will make your hamburgers dense. To mix the beef, use your fingers in a combing motion. Then form balls and pat them down.
Make a divot
Ever make burgers that look like a lumpy rock? Here’s the solution: If you press the center down to make a divot, the center of the burger will cook the same as the sides. Plus, you’ll have a nice, flat-looking patty.
Hamburger Cooking Temperatures
Rare: 120 to 125°F
Medium Rare: 130 to 135°F
Medium Well: 150 to 155°F
Well Done: 160 to 165°F

Ingredients
For the burgers:
- 1 pound ground beef
- 1 egg
- 2 teaspoons seasoned salt
- 2 teaspoons chipotle powder
- 2 tablespoons rolled oats
- 4 slices pepper jack cheese
- 4 brioche buns
For the chipotle mayo:
- 1/2 cup mayo
- 1 teaspoon chipotle powder
- 1/4 teaspoon liquid smoke
Topping ideas:
- Guacamole
- Pico de gallo
- Sour cream
- Tomatoes
- Lettuce
Instructions
For the burgers:
- Preheat your grill to a medium-high heat, about 450-500 degrees. . In a large bowl, combine the ground beef, egg, seasoned salt, chipotle powder and rolled oats. Gently mix together until completely combined.
- Evenly divide the meat mixture into fourths. Roll each fourth into a ball in your hands and gently flatten to desired burger thickness, making sure the center has a slight divot to ensure even cooking.
- Place the burgers on the grill and grill on each side for about 5 minutes, or until desired doneness is achieved. Place the cheese slices directly on top of the burgers within the last couple minutes of cooking to get a melty cheese. If you like your buns to be grilled as well, place them on the top grate of the grill at this time until the cheese is melted and the burgers are cooked through.
For the chipotle mayo:
- In a small bowl, stir to combine the mayo, chipotle powder and liquid smoke. Build the burgers by smearing the chipotle mayo on the bottom sides of the buns, placing the burgers on top and then followed by desired toppings and the top bun. Enjoy!

- 85/15 or 80/20 ground beef is recommended for this recipe.
