Cheesy Beef Sheet Pan Tacos

Cheesy Beef Sheet Pan Tacos are crispy on the outside — and cheesy and tender on the inside. 

Corn tortillas are brushed with olive oil and generously filled with sizzling ground beef and cheddar cheese (or pepper jack cheese, if you want a little kick!). 

Pop these beef tacos in the oven until they reach a perfect golden brown, creating a crispy and savory dinner that will make your mouth water.


  • 1 pound ground beef
  • 1 packet taco seasoning 
  • 8 oz shredded cheese (cheddar, monterey jack, Mexican blend or pepperjack for extra spice)
  • 8 corn tortillas – white or yellow
  • Olive oil

Topping ideas:

  • Sour cream
  • Guac
  • Salsa – pico or corn salsa would be great!
  • Lettuce
  • Pickled jalapenos
  • Queso


  1. Preheat your oven to 400 degrees. In a medium skillet, brown the ground beef until cooked through and broken apart. Drain off the excess grease and add the taco seasoning according to package instructions.
  2. Lay the tortillas out on a baking sheet and generously brush both sides with olive oil. Evenly split the taco meat in between the 8 tortillas, adding the taco meat to only one side of each tortilla so that it is able to be folded over.
  3. Top each tortilla with cheese, reserving some to be sprinkled on top. Carefully fold each taco over and gently hold until the folded taco stays put. If the tortilla breaks slightly, thats ok! It will still bake up nicely.
  4. Sprinkle the tops of the folded tacos with the remaining cheese and bake for 10-15 minutes, or until the tacos are golden brown and crispy and the cheese is melted.
  5. Serve with your favorite toppings and sauces and enjoy!
