Who doesn’t love a cheesy, crunchy taco?! I love how this recipe is a fun and easy spin on a classic taco. Load up on all the dipping sauces and dig in!

Taco’ bout easy…

There’s nothing better than a pan-fried corn tortilla taco. That is, unless you’re the one at the stovetop frying tortillas for everyone.

This sheet pan taco recipe will give you the crispy, melty results — without a ton of work. It’s great when you’re serving a group of people, and everyone can customize the toppings exactly how they want. 

The other thing that’s great about these is that they’re legit tacos. Ok, that sounds weird, but hear me out. A lot of other sheet pan taco recipes are for open-faced tacos, which is fine. But this recipe gives you real tacos at scale.

Sheet Pan Tacos Ingredients

Ground Beef

Use whatever ground beef you like best or have on hand.

Taco Seasoning

We’re going for easy sheet pan tacos, so I recommend using a packet. This is my favorite taco seasoning

Cheese

Shredded cheddar or shredded Monterey jack works great. You could also try pepper jack for extra spice!

Corn Tortillas

White or yellow — whichever you prefer!

Olive oil

This ingredient is the key to crispy tacos with shells that won’t break as easily.

How To Make Cheesy Beef Sheet Pan Tacos

Prepare the taco meat.

In a skillet over medium heat, brown the ground beef. Once it’s cooked through, drain any excess grease and add taco seasoning.

Prep the tortillas.

Lightly brush both sides of each corn tortilla with olive oil to help them crisp up in the oven.

Assemble the tacos.

On a baking sheet, assemble your tacos. Spoon the seasoned taco meat evenly onto one half of each tortilla. (This recipe makes eight tacos.) Add the cheese, leaving a little extra to sprinkle on at the end. Gently fold the tortillas over to close. Sprinkle with the remaining shredded cheese.

Bake the tacos.

Preheat your oven. Bake in the preheated oven until the tacos are golden brown, crispy, and the cheese has melted.

Serve!

Remove the tacos from the oven and serve dunked into your favorite salsas, sour cream, guacamole, or queso. Enjoy!

Toppings Galore

You can garnish these tacos two different ways.

Option one: Sprinkle toppings over the top

Option two: After the tacos have cooled), gently open the flaps and stuff with some extra goodness. 

Here are some topping ideas:

  • Sour cream
  • Guacamole
  • Queso
  • Sliced avocados
  • Salsa (Pico or corn salsa would be great!)
  • Shredded lettuce
  • Pickled jalapenos
  • Cilantro
  • A squeeze of lime

Yes, you can use flour tortillas. You won’t get the same crisp, but they’ll still taste great!

Can I make my own taco seasoning?

If you want to whip up a homemade taco seasoning, go for it! 

Can I make these tacos gluten-free?

Yes, make sure to use gluten-free corn tortillas to keep the beef tacos gluten-free.

How do I prevent the corn tortillas from breaking?

Lightly brushing the tortillas with olive oil before baking will help keep your tortillas pliable and prevent them from breaking. PS: if they do break, thats ok! you can still “fold” them in half and they will bake together perfectly!

How do I store leftovers?

You can store any leftovers in an airtight container in the refrigerator for a few days. Reheat the sheet pan tacos in the oven to crisp up the tortillas.

Ingredients

Scale
  • 1 pound ground beef
  • 1 packet taco seasoning 
  • 8 oz shredded cheese (cheddar, monterey jack, Mexican blend or pepperjack for extra spice)
  • 8 corn tortillas – white or yellow
  • Olive oil

Topping ideas:

  • Sour cream
  • Guac
  • Salsa – pico or corn salsa would be great!
  • Lettuce
  • Pickled jalapenos
  • Queso

Instructions

  1. Preheat your oven to 400 degrees. In a medium skillet, brown the ground beef until cooked through and broken apart. Drain off the excess grease and add the taco seasoning according to package instructions.
  2. Lay the tortillas out on a baking sheet and generously brush both sides with olive oil. Evenly split the taco meat in between the 8 tortillas, adding the taco meat to only one side of each tortilla so that it is able to be folded over.
  3. Top each tortilla with cheese, reserving some to be sprinkled on top. Carefully fold each taco over and gently hold until the folded taco stays put. If the tortilla breaks slightly, thats ok! It will still bake up nicely.
  4. Sprinkle the tops of the folded tacos with the remaining cheese and bake for 10-15 minutes, or until the tacos are golden brown and crispy and the cheese is melted.
  5. Serve with your favorite toppings and sauces and enjoy!
