- 32 oz cauliflower florets
- 2 large gold potatoes, cut into 1-inch cubes
- 1 cup heavy cream (or milk)
- 1 cup shredded parmesan cheese
- 1 teaspoon salt
- 1/4 teaspoon pepper
- 3 tablespoons butter
Instructions
- Add the cauliflower florets and potatoes to a large pot and cover with water. Bring to a boil over high heat and boil until fork-tender, about 15 minutes. Drain and add the vegetables back into the pot.
- Add in the heavy cream, parmesan cheese, salt, pepper and butter. Use an immersion blender or a hand mixer and blend until smooth and creamy. Serve and enjoy!
Notes
- A food processor or a blender can also be used to pureé the cauliflower mashed potatoes. If using either, transfer the vegetables to the blender or food processor after draining and before adding in the other ingredients. Then add in all the other ingredients and blend on high until smooth.
- Leftovers of this recipe re-heat very nicely.
- The potatoes can be left out if a low-carb option is desired.
