Let’s Talk Beets

When beets are brought into the discussion, they are usually something you love or you hate. BUT, you can’t make up your mind until you try them this way!

Not only do beets have a natural sweetness, but they are loaded full of all sorts of good things for you. So, we are making a side dish that is not only decadent, but healthy! Who would’ve thought?

I love layering classic red beets with the beautiful golden beets. Remember, you eat with your eyes first! And this is for sure a beauty.

If you can’t find golden beets (I have been able to find them at my local grocery store and Whole Foods), then sub them for regular red beets. It will still be good!

Thinly slicing the beets allows them to cook quickly, so you don’t have to worry about hours of cooking just for some beets. You also don’t need to peel them if the peel is in pretty good shape! Just wash them off good and you are set to go.

Ingredients Needed

Not only is this side dish delicious and beautiful to look at, but you only need a few simple ingredients to pull it together! Here’s what you need:

  • Red beets
  • Golden beets
  • Butter
  • Brown sugar
  • Fresh rosemary
  • Fresh thyme
  • Salt

 Layer the beets together, pour over the brown sugar herb butter and roast until perfectly done and candied!

Brown Sugar Herb Butter Roasted Beets is a vibrantly delicious side dish! Red and golden beets are coated with a brown sugar herb butter and roasted until perfectly candied. Each bite is loaded full of flavor! From the natural sweetness of the beets, to the decadence of the herb butter, this side dish will surprise your taste buds!


Ingredients

Scale
  • 4 red beets, sliced into 1/4 inch rounds
  • 4 golden beets, sliced into 1/4 inch rounds
  • 6 tablespoons butter, melted
  • 1/4 cup brown sugar
  • 2 teaspoons fresh thyme, chopped
  • 1 teaspoon fresh rosemary, chopped
  • 1/2 teaspoon salt

Instructions

  1. Preheat your oven to 400 degrees. Layer the red and gold beets together in a spiral fashion in a large pie dish, round baking dish, or 9×9 baking pan.
  2. In a small bowl, combine the melted butter, brown sugar, fresh thyme, fresh rosemary and salt. Evenly pour over the prepared beets.
  3. Bake for 25-30 minutes, or until the beets are tender and slightly candied. Enjoy!

Notes

  • No need to peel the beets if the skin is in good shape. Just give them a good wash!
  • If you can’t find golden beets, then sub them for classic red beets.
  • Look for beets that are about medium-size and uniform to each other.
  • Prep Time: 15 minutes
  • Cook Time: 30 minutes
