What is Brown Butter?

If you’ve never had brown butter before, now is the time! Brown butter is a golden concoction that comes from melting butter down and letting it bubble until perfectly golden brown. The aroma and taste are nutty and toffee-like, making the butter even more decadent! Who knew you could make butter more decadent? Well, this brown butter fits the bill perfectly!

When making brown butter, make sure to keep a close eye on it as butter can burn easily. Nobody wants burned butter, trust me. The butter will bubbly, get foamy, and then turn brown. So, swirl it around and keep an eye on it!

Sweet Potato Filling

Whipping up a quick batch of sweet potato filling is easier than you would think. Simply boil the cubed sweet potatoes until fork tender. Transfer to a bowl, add in all the fixings and get to whipping! 

For the best consistency, I highly recommend using a hand mixer or a stand mixer vs. a potato masher. The filling should be as smooth as possible – nobody wants a chunky filling! 

After the sweet potato filling is silky smooth, pour it into a 9×13 baking dish, or a deep, round baking dish such as this one I found at Anthropologie!

Marshmallow Topping

Getting to top an entire dish with marshmallows is like a gift in itself! When it comes to the mallow topping, I like to use a combination of both regular-sized marshmallows and mini marshmallows. I think it just gives the dish such a fun and yummy appearance! The mini marshmallows fill in all the nooks and crannies that the larger ones can’t reach. Plus, how can you go wrong with toasted marshmallows? You just can’t!

The sweet potato filling gets baked prior to adding on the marshmallow topping. So once the mallows are on, it’s go time! They will take about 10-15 minutes in the oven to get nice and toasty.

Ingredients

  • 4 pounds sweet potatoes, peeled and cubed
  • 4 tablespoons butter
  • 1/4 cup heavy cream
  • 1/4 cup brown sugar
  • 1/2 teaspoon salt
  • 2 large eggs
  • 1 cup marshmallows
  • 2 cups mini marshmallows

Instructions

  1. Add the sweet potatoes to a large pot, cover with water and bring to a boil. Boil until fork tender, about 12-15 minutes. Drain.
  2. Preheat your oven to 350 degrees. In a small saucepan, melt the butter over low heat. Allow to bubble until golden brown and the aroma smells nutty and toffee-like. Keep a close eye on it as it can burn easily.
  3. Add the sweet potatoes to a large bowl and pour in the browned butter, heavy cream, brown sugar and salt. Use a hand mixer to cream until smooth. Add in the eggs and combine completely.
  4. Pour the sweet potato filling into a 9×13 pan or a deep, round baking dish. Bake for about 40 minutes, or until the top starts to turn a bit golden.
  5. Arrange the different-sized marshmallows on top and bake for another 10-15 minutes, or until the marshmallows are golden brown and toasted. Enjoy!

Notes

  • Keep a close eye on the brown butter when making it as it can easily burn.
  • This dish can be made ahead of time – simply wait to add the marshmallows on top until you are ready to toast and serve. The filling will need some time to re-heat as well.
