What Type of Apples to Use
Apple season is officially upon us! That means it’s time to get to baking! When it comes to baked apple desserts, it is best to choose a more tart, sturdy apple such as Granny Smith’s. Not only does their natural tartness help balance out the sweetness, but they stand up well texture-wise and don’t get terribly mushy.
Other tart or firm baking apples that can be used in this recipe are Jonathans, Honeycrisp, Braeburn or Pink Lady. But, good ol’ Granny Smith apples are my go-to for baking!
Let’s Talk Brown Butter
An apple crisp wouldn’t be the same without, well, a crisp topping! Melting the butter down until it is perfectly golden brown is the winning ticket for this crisp. Definitely don’t skip this step!
Brown butter develops a rich, nutty, toffee-like flavor that just can’t be duplicated. It’s out-of-this-world delicious! Using this as the base for the crisp topping is game changing. When making the brown butter, make sure to keep an eye on it as it turns brown quickly once it’s done bubbling. Burnt butter isn’t wanted here. Only luscious, smooth, golden brown decadency.
After browning the butter, stirring in the oats, flour, sugar and cinnamon, the crisp topping then becomes the perfect blanket to tuck the fruit filling away. I can smell it now, and it’s glorious!
Fall baking wouldn’t be the same without apples. If you are picking your own at local apple orchards or taking in the fully stocked displays at the grocery store, apples are always right for the picking.
Bringing this crips to life is therapeutic. From peeling the apples, to cutting into slices, to tossing the fruit together with warm spices and sugars, to melting down brown butter, to crumbling a crisp over the top and baking until golden brown and perfectly bubbly. It makes my heart happy just thinking about it!

Ingredients
For the fruit filling:
- 4 Granny Smith apples, peeled and cut into 1/4 inch slices
- 1 pint blueberries
- 1/2 cup sugar
- 1/2 cup brown sugar
- 1/4 teaspoon cinnamon
- 2 tablespoons flour
For the brown butter crisp topping:
- 1 stick (8 tablespoons) butter
- 3/4 cup flour
- 1/2 cup old fashioned oats
- 1/4 cup sugar
- 1/2 teaspoon vanilla extract
Instructions
For the fruit filling:
- Preheat your oven to 350 degrees. In a medium-sized bowl, toss together the apple slices and blueberries with the sugar, brown sugar, cinnamon and flour until completely coated. Transfer to a 9×9 baking dish or one of similar size.
For the brown butter crisp topping:
- Brown the butter in a small saucepan over low heat by allowing it to melt and bubble. Watch closely and stir occasionally as the butter will brown quickly once its bubbled down. The desired result is a rich, golden brown color and a toffee-like smell.
- Pour the brown butter into a small bowl and add in the flour, oats, sugar and vanilla. Stir to combine and from a crisp-like topping.
- Evenly top the prepared fruit filling with the crisp topping. Place the baking dish on top of a sheet pan lined with parchment in case of bubbling over.
- Bake for 50-60 minutes, or until the crisp topping is golden brown and the fruit filling is bubbly and cooked through. Serve warm with vanilla ice cream or whipped cream. Enjoy!
