Ingredients
For the salad:
- 8 oz spring lettuce mix
- 12 oz blackberries
- 1/3 cup blue cheese
- 1/3 cup candied walnuts, almonds or pecans
- (2) 6 oz salmon filets
- 1 tablespoon extra virgin olive oil
- Salt and pepper
For the balsamic dressing:
- 1 tablespoon Dijon mustard
- 1 small shallot, finely diced
- 2 tablespoons honey
- 1/4 cup balsamic vinegar
- 1/4 cup extra virgin olive oil
- 1/2 teaspoon salt
Instructions
For the salad:
- Preheat your grill to medium-high heat. Gently rub the olive oil onto both sides of the salmon filets. Season both sides with salt and pepper. Place the salmon filets directly onto the grill and grill for 5-8 minutes on each side, or until desired doneness is achieved.
- In a large bowl, gently toss together the spring mix, black berries and bleu cheese to combine.
For the balsamic dressing:
- In a small bowl, whisk together the Dijon mustard, shallot, honey, balsamic vinegar, olive oil and salt until smooth and combined.
- Pour the dressing over the top of the prepared salad. Gently toss to evenly combine. Top the dressed salad with the grilled salmon filets and serve. Enjoy!

- If you are serving the salad without the salmon or other protein, simply skip that step. You could also serve the salad with roasted salmon or chicken instead of grilled!
- If you are wanting to prepare this salad in advance or have as a meal prep option, assemble the salad and the dressing separately. Combine to toss prior to serving.
