Black & Bleu Salmon Salad

Black & Bleu Salmon Salad is a simple, yet delicious salad recipe! A bed of fresh lettuce mix is topped with juicy blackberries, salty, creamy bleu cheese crumbles, candied nuts and perfectly grilled salmon. Toss it all up with a homemade balsamic dressing and dig in!

So, I actually have a confession to make along with this salad post. I’m not a huge fan of making salads at home! However, when I do make a homemade salad, it is always something similar to this Black & Bleu Salmon Salad! I love how versatile it can be. If you don’t have salmon, you can use chicken. If you want it as a quick lunch or side dish, opt out of a protein/meat topping and you still have a perfect salad to munch on! Heck, if you don’t have time to whip up a quick batch of homemade dressing, use your favorite bottled dressing! Versatile recipes like this one are great to have on hand so that you can customize it to any situation.

I love how fresh and vibrant this salad is. All the ingredients work together to serve up the perfect bite. If you’ve never made a homemade dressing before, do not fear! It is simple and you will end up asking yourself why you’ve never done it before. Not only does this salad make a great main dish or side dish, but it is a perfect meal prep option! Simply leave the dressing on the side until you are ready to eat.

Description

Black & Bleu Salmon Salad is a simple, yet delicious salad recipe! A bed of fresh lettuce mix is topped with juicy blackberries, salty, creamy bleu cheese crumbles, candied nuts and perfectly grilled salmon. Toss it all up with a homemade balsamic dressing and dig in!


Ingredients

Scale

For the salad:

  • 8 oz spring lettuce mix
  • 12 oz blackberries
  • 1/3 cup bleu cheese
  • 1/3 cup candied walnuts or almonds
  • (2) 6 oz salmon filets
  • 1 tablespoon extra virgin olive oil
  • Salt and pepper

For the balsamic dressing:

  • 1 tablespoon Dijon mustard
  • 1 small shallot, finely diced
  • 2 tablespoons honey
  • 1/4 cup balsamic vinegar
  • 1/4 cup extra virgin olive oil
  • 1/2 teaspoon salt

Instructions

For the salad:

  1. Preheat your grill to medium-high heat. Gently rub the olive oil onto both sides of the salmon filets. Season both sides with salt and pepper. Place the salmon filets directly onto the grill and grill for 5-8 minutes on each side, or until desired doneness is achieved.
  2. In a large bowl, gently toss together the spring mix, black berries and bleu cheese to combine.

For the balsamic dressing:

  1. In a small bowl, whisk together the Dijon mustard, shallot, honey, balsamic vinegar, olive oil and salt until smooth and combined.
  2. Pour the dressing over the top of the prepared salad. Gently toss to evenly combine. Top the dressed salad with the grilled salmon filets and serve. Enjoy!

Notes

  • If you are serving the salad without the salmon or other protein, simply skip that step. You could also serve the salad with roasted salmon or chicken instead of grilled!
  • If you are wanting to prepare this salad in advance or have as a meal prep option, assemble the salad and the dressing separately. Combine to toss prior to serving.
  • Prep Time: 20 minutes
  • Cook Time: 10 minutes
