Description

Baja Shrimp Tacos are a fun twist on the classic taco! Spicy shrimp are piled onto a crispy corn tortilla and topped with crunchy cabbage, creamy sauce, and bright cilantro. Each taco is packed with summer flavors and loaded with lean protein.

The shrimp are grilled, giving them added flavor. This healthy meal is easy enough for a weeknight, but delicious enough for a crowd. Give the classic taco bar a makeover, complete with tasty toppings, the best guacamole, and strawberry smash peach margaritas.

For the Baja shrimp:

  • 16 oz large shrimp, peeled and de-veined
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon paprika
  • 1/4 teaspoon cumin
  • 1/2 teaspoon chili powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 2 tablespoons extra virgin olive oil

For the Baja sauce:

  • 1/4 cup mayo
  • 1/4 cup sour cream
  • 1/2 teaspoon chili powder
  • 1/4 teaspoon paprika

Instructions

For the Baja shrimp:

  1. Preheat your grill to high heat (about 450-500 degrees) and clean the grates.
  2. Add the shrimp to a medium-sized bowl. Evenly coat with the olive oil. Season with the garlic powder, paprika, cumin, chili powder, onion powder, salt and pepper and gently toss to evenly combine and coat.
  3. If your shrimp are large enough to not fall through the grates of the grill, place them directly onto the grill. Or use metal skewers or a grill basket to help you grill your shrimp.
  4. Grill the shrimp for 3-5 minutes on each side or until cooked through. The shrimp will turn pink and should be perfectly grilled.

For the Baja sauce:

  1. In a small bowl, combine the mayo, sour cream, chili powder and paprika and stir to combine.

For serving:

  1. Immediately serve the grilled Baja shrimp with white or yellow corn tortillas, shredded cabbage, cilantro and the Baja sauce. Enjoy!

Notes

  • Large or colossal shrimp can be used. Pre-cooked shrimp is not recommended.
  • If sautéing, pour the olive oil into the bottom of a large skillet instead of coating the shrimp with it. Cook the seasoned shrimp over medium-high heat until cooked through.
