Description

Take your chicken dinner to the next level with this Apricot Baked Chicken! Chicken breasts are glazed with a bright and flavorful apricot glaze spotted with fresh thyme and baked to perfection. An easy, delicious and healthy way to amp up your chicken dinner game!


Ingredients

  • 4 boneless, skinless chicken breasts (about 2 1/23 pounds total)
  • 1 teaspoon seasoned salt
  • 1 cup apricot preserves
  • 1 teaspoon fresh thyme, chopped

Instructions

  1. Preheat your oven to 400 degrees. Evenly arrange the chicken breasts in a 9×13 baking pan and set aside.
  2. Add the apricot preserves into a small, microwave-safe bowl and microwave for about 10 seconds to slightly warm and loosen the preserves. Stir in the chopped thyme.
  3. Evenly spread the apricot preserves mixture over the tops of the chicken. Cover with foil and bake for 35-40 minutes. Remove the foil, baste the chicken with the juices and glaze from the bottom of the pan and bake for another 15-20 minutes, or until the top of the chicken starts to turn golden brown and is cooked through. The glaze will also reduce a bit.
  4. Serve the chicken with the glaze from the pan spooned over the top. Enjoy!

Notes

  • Chicken thighs or chicken tenderloins can also be used for this recipe. Cooking time may need to be adjusted as they are smaller and thinner.
  • If using dried thyme, use 1/2 teaspoon.
