I absolutely love how simple, yet delicious this recipe is! You know what makes it even better? It’s only 4 ingredients! An easy, flavor-filled chicken dinner that is anything but ordinary. The fruity, bright apricot pairs perfectly with the chicken. An added flavor bonus of the fresh thyme boosts it even more. We love to eat this Apricot Baked Chicken as an easy weeknight dinner and then re-heat the leftovers throughout the week. It’s a win-win!

What Cut of Chicken to Use
Start this recipe off by grabbing some chicken breasts. Personally, I love to use boneless, skinless chicken breasts for ease of cooking and eating. You don’t have to discard any skin or bones before serving. I always have some in my refrigerator or freezer! Here’s some other chicken options:
- Boneless, skinless chicken breasts
- Bone-in, skin-on chicken breasts
- Chicken tenders – these will cook faster since they are smaller, so a great way to cut back on cooking time!
- Boneless, skinless chicken thighs
- Bone-in, skin-on chicken thighs
If you are using a cut of chicken that has the skin on and bone-in, then the cooking time may need to be adjusted a bit to get the chicken cooked through. I would also recommend taking the foil off sooner so the skin has more time to get golden brown and slightly crispy.

Apricot Glaze
The apricot glaze that goes on top of the chicken couldn’t be easier, or more delicious!
Here’s what is needed:
- Apricot preserves – it looks very similar to orange marmalade and I love it! It’s sweet, but not overwhelmingly so. Plus, the bright orange color brings the chicken to life!
- Thyme – chopped fresh thyme is preferred for this recipe since there is minimal ingredients. But, dried thyme can also be used for ease if need be.
Microwaving the apricot preserves for a few seconds may seem odd, but it makes it much easier to work with! That way, you’ll be able to mix the chopped thyme in more easily and then spread it across the chicken without a problem.

Apricot Baked Chicken

Description
Take your chicken dinner to the next level with this Apricot Baked Chicken! Chicken breasts are glazed with a bright and flavorful apricot glaze spotted with fresh thyme and baked to perfection. An easy, delicious and healthy way to amp up your chicken dinner game!
Ingredients
- 4 boneless, skinless chicken breasts (about 2 1/2 – 3 pounds total)
- 1 teaspoon seasoned salt
- 1 cup apricot preserves
- 1 teaspoon fresh thyme, chopped
Instructions
- Preheat your oven to 400 degrees. Evenly arrange the chicken breasts in a 9×13 baking pan and set aside.
- Add the apricot preserves into a small, microwave-safe bowl and microwave for about 10 seconds to slightly warm and loosen the preserves. Stir in the chopped thyme.
- Evenly spread the apricot preserves mixture over the tops of the chicken. Cover with foil and bake for 35-40 minutes. Remove the foil, baste the chicken with the juices and glaze from the bottom of the pan and bake for another 15-20 minutes, or until the top of the chicken starts to turn golden brown and is cooked through. The glaze will also reduce a bit.
- Serve the chicken with the glaze from the pan spooned over the top. Enjoy!
Notes
- Chicken thighs or chicken tenderloins can also be used for this recipe. Cooking time may need to be adjusted as they are smaller and thinner.
- If using dried thyme, use 1/2 teaspoon.

You might add into the recipe method, where the seasoning salt is used?! According to the photo, you put it on first, then the apricot glaze? Nothing mentioned in the instructions. It was ok – I used Apricot ‘jam’ & maybe this is different than ‘preserves’.? ..
